短波紫外照射對玫瑰香葡萄品質(zhì)和白藜蘆醇及其衍生物含量的影響

【摘要】:采用超高效液相色譜-串聯(lián)質(zhì)譜法對玫瑰香葡萄中白藜蘆醇及其衍生物的含量進(jìn)行測定。結(jié)果表明,當(dāng)玫瑰香葡萄經(jīng)過劑量為4.5 k J/m~2的短波紫外照射后,20℃貯藏至48 h時,白藜蘆醇和白藜蘆醇苷含量達(dá)到最高,分別為90.29 μg/g和163.28 μg/g;貯藏至72 h時,紫檀芪含量達(dá)到最高38.67 μg/g。短波紫外照射也可以降低可溶性固形物、VC、可滴定酸等品質(zhì)評價指標(biāo)的下降速率。
