【摘要】：類(lèi)胡蘿卜素是一類(lèi)由植物和某些光合微生物產(chǎn)生的親脂性異戊二烯類(lèi)色素,廣泛存在于自然界中。根據(jù)其種類(lèi)和化學(xué)鍵斷裂位置不同,可生成多種在生物體內(nèi)有重要功能的衍生物,包括類(lèi)維生素A、色素、植物激素和香氣物質(zhì)。目前,類(lèi)胡蘿卜素的降解方式有多種,如物理降解、化學(xué)降解和生物降解等,其中生物降解又分為特異性酶降解和非特異性酶降解。本文對(duì)類(lèi)胡蘿卜素降解產(chǎn)物的種類(lèi)和功能進(jìn)行介紹,并對(duì)其降解方式進(jìn)行全面綜述,重點(diǎn)闡述生物降解的優(yōu)勢(shì),對(duì)特異性酶和非特異性酶及其作用位點(diǎn)進(jìn)行詳細(xì)介紹,指出篩選高活性類(lèi)胡蘿卜素降解酶及其在食品加工工業(yè)上的應(yīng)用為今后研究的方向。
[Abstract]:Carotenoid is a kind of lipophilic isoprene pigments produced by plants and some photosynthetic microorganisms. Depending on their species and chemical bond breaking sites, many derivatives with important functions in organisms can be produced, including vitamin A, pigments, plant hormones and aroma substances. At present, there are many degradation methods of carotenoid, such as physical degradation, chemical degradation and biodegradation, among which biodegradation can be divided into specific enzyme degradation and non-specific enzyme degradation. In this paper, the types and functions of the degradation products of carotenoids are introduced, and their degradation methods are summarized. The advantages of biodegradation are emphasized, and the specific enzymes and nonspecific enzymes and their action sites are introduced in detail. It is pointed out that screening high activity carotenoid degrading enzyme and its application in food processing industry are the research directions in the future.
