黃酮醇糖苷與茶樹品種適制性關(guān)系

【摘要】:對不同加工適制性的18個(gè)茶樹品種春季茶葉中10種黃酮醇糖苷進(jìn)行了超高效液相色譜-四極桿-飛行時(shí)間質(zhì)譜聯(lián)用檢測,并計(jì)算了葡萄糖苷化黃酮醇與半乳糖苷化黃酮醇的比值。結(jié)果發(fā)現(xiàn)相比于適制綠茶的茶樹品種,適制紅茶品種茶葉中黃酮醇葡萄糖苷化水平較高,而半乳糖苷化水平較低。山柰酚-3-葡萄糖苷含量、山柰酚-3-葡萄糖酰蕓香糖苷含量、山柰酚-3-葡萄糖苷/山柰酚-3-半乳糖苷比值、槲皮素-3-葡萄糖苷/槲皮素-3-半乳糖苷比值、楊梅素-3-葡萄糖苷/楊梅素-3-半乳糖苷比值在不同適制性品種間具有顯著性差異(P0.05)。其中山柰酚-3-葡萄糖苷含量和山柰酚-3-葡萄糖苷/山柰酚-3-半乳糖苷比值差異極顯著(P0.001),對于綠茶適制性品種和紅茶適制性品種的判斷準(zhǔn)確率分別為100%和83%,具有作為指導(dǎo)茶樹品種適制性生化指標(biāo)的可能。
[Abstract]:Ten kinds of flavonol glycosides from 18 tea varieties with different processing suitability were detected by ultrahigh performance liquid chromatography-quadrupole time-of-flight mass spectrometry. The ratio of glucoside flavonol to galactoside flavonol was calculated. The results showed that the level of flavonol glucoside was higher and galactosylation was lower than that of tea varieties with suitable green tea. Kaempferol-3- glucoside content, kaempferol-3-glucoylrutin content, kaempferol-3-glucoside / kaempferol-3-galactoside ratio, quercetin-3-glucoside / quercetin-3-galactoside ratio, The ratio of myricetin-3-glucoside / myricetin-3-galactoside was significantly different among different suitable varieties (P0.05). The content of kaempferol -3-glucoside and the ratio of kaempferol -3-glucoside to kaempferol -3-galactoside were significantly different (P0.001). The accuracy of judgement for suitable varieties of green tea and black tea were 100% and 83%, respectively. In order to guide the tea varieties suitable biochemical indicators.
