夏枯草提取物清除亞硝酸鹽及阻斷亞硝胺合成的研究

【摘要】:在體外模擬人體胃液條件下,采用分光光度法測定了夏枯草水提取物、醇提取物對亞硝酸鹽的清除率以及對亞硝胺合成的阻斷率,并與常用抗氧化劑維生素C進(jìn)行比較。結(jié)果表明:隨反應(yīng)質(zhì)量濃度的提高、作用時(shí)間的延長,夏枯草提取物對亞硝酸鈉的清除能力和阻斷亞硝胺合成能力有明顯提高。根據(jù)不同作用時(shí)間的清除效果及阻斷亞硝胺合成效果的對比,可以得知,120 min為較佳的作用時(shí)間。通過與維生素C比較分析得出,夏枯草提取物具有較強(qiáng)的亞硝酸鈉清除能力和阻斷亞硝胺合成的能力。
[Abstract]:Under the condition of simulated human gastric juice in vitro, the water extract and alcohol extract of Prunella vulgaris were determined by spectrophotometry. The removal rate of nitrite and the blocking rate of nitrosamine synthesis were determined by spectrophotometry. The results were compared with those of vitamin C, a common antioxidant. The results showed that with the increase of the reaction concentration and the prolongation of the action time, the scavenging ability of the extract of Prunella vulgaris to sodium nitrite and the ability to block the synthesis of nitrosamines were obviously improved. According to the scavenging effect of different action time and the comparison of blocking the synthesis of nitrosamine, we can know that the best action time is 120 min. Compared with vitamin C, the extract of Prunella vulgaris has strong ability of removing sodium nitrite and blocking the synthesis of nitrosamines.
