吉林省原料奶質(zhì)量安全控制評(píng)價(jià)研究

【摘要】:乳制品質(zhì)量安全一直是全民關(guān)注的焦點(diǎn)話題。原料奶作為乳制品供應(yīng)鏈的開端,是乳制品質(zhì)量安全的基礎(chǔ)保障。近年來,吉林省奶業(yè)發(fā)展取得了驕人的成績(jī),但奶業(yè)發(fā)展水平較發(fā)達(dá)省份仍存在很大差距。因此,吉林省奶業(yè)發(fā)展需從根本出發(fā),全面提升原料奶質(zhì)量安全,以優(yōu)質(zhì)好奶贏得消費(fèi)者的信賴,進(jìn)而促進(jìn)吉林省奶業(yè)又好又快的發(fā)展;诠⿷(yīng)鏈理論,分析影響乳制品質(zhì)量安全的關(guān)鍵控制環(huán)節(jié),并以此為基礎(chǔ)構(gòu)建了原料奶質(zhì)量安全控制評(píng)價(jià)體系。通過對(duì)吉林省原料奶質(zhì)量安全控制現(xiàn)狀的闡述與實(shí)證分析,指出影響吉林省原料奶質(zhì)量安全的關(guān)鍵因素,最后依據(jù)結(jié)論提出了改進(jìn)措施。首先運(yùn)用Kano理論對(duì)影響乳制品質(zhì)量安全的關(guān)鍵環(huán)節(jié)進(jìn)行甄別,指出原料奶生產(chǎn)與流通銷售是影響乳制品質(zhì)量安全的兩個(gè)關(guān)鍵環(huán)節(jié)。在此基礎(chǔ)上,構(gòu)建了原料奶質(zhì)量安全控制評(píng)價(jià)體系,為問卷調(diào)查與實(shí)地調(diào)研奠定了基礎(chǔ)。其次,結(jié)合調(diào)查問卷綜合評(píng)價(jià)了吉林省原料奶質(zhì)量安全的控制現(xiàn)狀。通過BP神經(jīng)網(wǎng)絡(luò)與MIV法相結(jié)合對(duì)吉林省原料奶質(zhì)量安全控制的實(shí)證分析,結(jié)果顯示飼草飼料質(zhì)量與結(jié)構(gòu)、奶牛良種化水平、奶牛養(yǎng)殖環(huán)境、疾病防疫水平以及擠奶設(shè)備衛(wèi)生是影響吉林省原料奶質(zhì)量安全的關(guān)鍵控制因素,并以此提出了相應(yīng)的改進(jìn)措施。通過大力發(fā)展苜蓿產(chǎn)業(yè),優(yōu)化吉林省飼草飼料結(jié)構(gòu);加強(qiáng)奶牛良種繁育體系建設(shè),優(yōu)化奶牛品種結(jié)構(gòu),提升原料奶品質(zhì);規(guī)范奶牛養(yǎng)殖場(chǎng)的建設(shè),優(yōu)化奶牛養(yǎng)殖環(huán)境,進(jìn)而原料奶質(zhì)量安全提供保障;嚴(yán)格規(guī)范獸藥的安全使用,并完善疾病預(yù)防體系的建立;加強(qiáng)擠奶設(shè)備清洗消毒工作,確保原料奶質(zhì)量安全。
[Abstract]:Dairy products quality and safety has been the focus of attention of the whole people. As the beginning of dairy supply chain, raw milk is the basic guarantee of dairy product quality and safety. In recent years, the development of dairy industry in Jilin Province has made remarkable achievements, but there is still a big gap in the development level of dairy industry in the developed provinces. Therefore, the development of milk industry in Jilin Province should proceed from the root, improve the quality and safety of raw milk in an all-round way, win the trust of consumers with high quality and good milk, and then promote the good and fast development of milk industry in Jilin Province. Based on the supply chain theory, the key control links affecting the quality and safety of dairy products are analyzed, and the evaluation system of the quality and safety of raw milk is constructed. Based on the analysis of the present situation of raw milk quality and safety control in Jilin Province, the key factors affecting the quality and safety of raw milk in Jilin Province are pointed out. Finally, the improvement measures are put forward according to the conclusion. Firstly, Kano theory is used to identify the key links that affect the quality and safety of dairy products, and it is pointed out that the production and circulation of raw milk are the two key links that affect the quality and safety of dairy products. On this basis, the quality and safety control evaluation system of raw milk was constructed, which laid a foundation for questionnaire investigation and field investigation. Secondly, the present situation of quality and safety control of raw milk in Jilin Province was comprehensively evaluated by questionnaire. BP neural network combined with MIV method was used to analyze the quality and safety control of raw milk in Jilin Province. The results showed that the quality and structure of forage feed, the level of dairy cattle breeding and the environment of dairy cattle breeding. The level of disease prevention and milking equipment hygiene are the key control factors affecting the quality and safety of raw milk in Jilin Province, and the corresponding improvement measures are put forward. Through vigorously developing alfalfa industry, optimizing forage structure in Jilin Province, strengthening the construction of breeding system of improved breeds of dairy cattle, optimizing the structure of dairy cattle varieties and improving the quality of raw milk; Standardizing the construction of dairy cattle breeding farm, optimizing the dairy breeding environment, providing guarantee for the quality and safety of raw milk, strictly standardizing the safe use of veterinary drugs, and perfecting the establishment of disease prevention system; Strengthen the cleaning and disinfection of milking equipment to ensure the quality and safety of raw milk.
