歐美連鎖酒店餐飲食品安全管理及給中國(guó)的啟示

【摘要】:在對(duì)歐美連鎖酒店餐飲食品安全管理的特點(diǎn)進(jìn)行介紹的基礎(chǔ)上,以紐約市中心希爾頓酒店作為典型案例進(jìn)一步說(shuō)明歐美連鎖酒店餐飲食品安全管理的先進(jìn)經(jīng)驗(yàn)。提出對(duì)中國(guó)連鎖酒店進(jìn)一步開(kāi)展餐飲食品安全管理工作的啟示:一是從法律法規(guī)層面完善餐飲業(yè)食品安全標(biāo)準(zhǔn)體系;二是促進(jìn)連鎖酒店加強(qiáng)對(duì)食品原材料采購(gòu)的管理;三是建立和推廣連鎖酒店標(biāo)準(zhǔn)化食品安全管理模式;四是強(qiáng)化連鎖酒店和監(jiān)管部門(mén)的食品安全信息化管理水平;五是在連鎖酒店內(nèi)部推廣和實(shí)施HACCP體系。
[Abstract]:Based on the introduction of the characteristics of food safety management in European and American chain hotels, the advanced experience of food safety management in European and American chain hotels is further illustrated by taking New York Hilton Midtown as a typical case. This paper puts forward the enlightenment to the further development of food safety management of Chinese chain hotels: first, to perfect the food safety standard system of catering industry from the level of laws and regulations; second, to promote the chain hotels to strengthen the management of food raw materials procurement; The third is to establish and popularize the standardized food safety management model of chain hotels; the fourth is to strengthen the food safety information management level of chain hotels and regulators; and the fifth is to promote and implement HACCP system within chain hotels.
