不同風險情景中的消費者食品安全信任與風險感知關系研究

【摘要】:隨著食品技術的飛速發(fā)展,人們對一系列新興技術生產(chǎn)的食品爭議日益增加。越來越多的食品安全風險事件帶來了對新興技術食品的不同意見。部分觀點提出新興食品具有低耗高產(chǎn)、營養(yǎng)豐富、毒害作用小等優(yōu)點,對針對性營養(yǎng)供給、應對特殊災害、解決部分地區(qū)食品短缺問題意義重大。同時食品高科技的充分利用提高勞動生產(chǎn)效率,降低生產(chǎn)成本,促進食品科技的革新。也存在部分反對者認為新興食品帶來的潛在風險,如食品安全、環(huán)境破壞潛在危害,可能影響人類的長遠身心健康。在新興食品行業(yè)不斷發(fā)展的形勢下研究消費者對新興食品感知風險水平,通過新興食品領域消費者對公共監(jiān)管部門信任水平對風險感知的影響,進一步探究傳統(tǒng)食品消費者對公共監(jiān)管部門信任對新興領域感知關系的影響。對明晰新興食品領域消費者對公共監(jiān)管部門信任與風險感知關系以及通過不同領域調(diào)節(jié)感知關系,進而降低新興食品風險水平,具有重要的理論與現(xiàn)實意義。論文從消費者視角出發(fā),以備受爭議的新興食品為研究對象,參閱大量的國內(nèi)外文獻,以marye信任模型為研究基礎,選擇吉林省長春市作為調(diào)研區(qū)域,通過調(diào)查問卷的方式了解長春市消費者的基本情況、對新興食品食品的風險感知水平、消費者對公共監(jiān)管部門在食品安全方面的信任水平等。用線性回歸的方式,探究新興食品領域消費者對公共監(jiān)管部門信任水平與消費者新興食品風險感知水平的影響關系,進一步探究傳統(tǒng)食品領域消費者公共監(jiān)管部門信任對新興領域感知關系的影響。有針對性提出了我國新興食品消費者風險感知水平降低建策建議,為公共監(jiān)管部門提供了決策參考。研究結果顯示:(1)新興食品領域消費者對公共監(jiān)管部門關注信任與新興食品風險感知是負向影響;(2)新興食品領域消費者對公共監(jiān)管部門開放信任與新興食品風險感知是負向影響;(3)傳統(tǒng)食品領域中的公共監(jiān)管部門關注信任會調(diào)節(jié)新興食品領域中消費者對公共監(jiān)管部門關注信任與風險感知關系。本文從公共監(jiān)管部門角度提出相應的政策建議。公共監(jiān)管部門應該在新興食品領域有針對性的增加政策透明度,加強對新興食品的監(jiān)管,提高公共監(jiān)管部門公信力,增強消費者信心。同時利用現(xiàn)有在傳統(tǒng)食品領域消費者公共監(jiān)管部門開放信任,調(diào)節(jié)新興領域信任與感知關系。
[Abstract]:With the rapid development of food technology. More and more food safety risk events bring different opinions on the emerging technology food. Some views put forward that emerging food has low consumption and high yield. The advantages of rich nutrition and small toxic effect are of great significance to the targeted nutrition supply, to deal with special disasters and to solve the problem of food shortage in some areas. At the same time, the full use of high technology of food to improve the efficiency of labor production. Reduce production costs, promote innovation in food technology. There are also some opponents of emerging food risks, such as food safety, potential damage to the environment. May affect the long-term physical and mental health of human beings. In the emerging food industry under the situation of continuous development of consumer perception of emerging food risk level. The impact of consumer trust level on risk perception through emerging food sector. To further explore the impact of traditional food consumers' trust in public regulatory authorities on the perceived relationship between emerging areas. To clarify the relationship between consumer trust and risk perception in emerging food sector and through different fields. Adjust the perception. Therefore, it is of great theoretical and practical significance to reduce the risk level of emerging food. From the perspective of consumers, this paper takes the controversial emerging food as the research object, and refers to a large number of domestic and foreign literature. On the basis of marye trust model, Changchun City of Jilin Province is selected as the research area, through the way of questionnaire to understand the basic situation of consumers in Changchun City, the level of risk perception of emerging food products. The level of consumer trust in food safety, etc., by linear regression. To explore the relationship between consumer trust level and risk perception level of emerging food in emerging food field. Further explore the traditional food field consumer public regulatory authority trust on the emerging areas of perceived relationship. Targeted recommendations for reducing the risk awareness level of emerging food consumers in China. The research results show that the consumers in emerging food field have a negative impact on public regulatory authorities' concern about trust and emerging food risk perception. (2) consumers in the field of emerging food have a negative impact on the open trust of public regulators and the perception of emerging food risks; 3). The concern of the public regulators in the traditional food field will regulate the relationship between the consumers' concern about trust and risk perception in the emerging food field. This paper puts forward corresponding policy suggestions from the perspective of the public regulatory authorities. Public regulators should aim to increase policy transparency in the emerging food sector. Strengthen the regulation of emerging food, improve the credibility of public regulators, enhance consumer confidence. At the same time, take advantage of the existing in the field of traditional food consumer public regulators open trust. Regulate the relationship between trust and perception in emerging areas.
