不同風(fēng)險(xiǎn)情景中的消費(fèi)者食品安全信任與風(fēng)險(xiǎn)感知關(guān)系研究

【摘要】:隨著食品技術(shù)的飛速發(fā)展,人們對(duì)一系列新興技術(shù)生產(chǎn)的食品爭(zhēng)議日益增加。越來(lái)越多的食品安全風(fēng)險(xiǎn)事件帶來(lái)了對(duì)新興技術(shù)食品的不同意見(jiàn)。部分觀點(diǎn)提出新興食品具有低耗高產(chǎn)、營(yíng)養(yǎng)豐富、毒害作用小等優(yōu)點(diǎn),對(duì)針對(duì)性營(yíng)養(yǎng)供給、應(yīng)對(duì)特殊災(zāi)害、解決部分地區(qū)食品短缺問(wèn)題意義重大。同時(shí)食品高科技的充分利用提高勞動(dòng)生產(chǎn)效率,降低生產(chǎn)成本,促進(jìn)食品科技的革新。也存在部分反對(duì)者認(rèn)為新興食品帶來(lái)的潛在風(fēng)險(xiǎn),如食品安全、環(huán)境破壞潛在危害,可能影響人類(lèi)的長(zhǎng)遠(yuǎn)身心健康。在新興食品行業(yè)不斷發(fā)展的形勢(shì)下研究消費(fèi)者對(duì)新興食品感知風(fēng)險(xiǎn)水平,通過(guò)新興食品領(lǐng)域消費(fèi)者對(duì)公共監(jiān)管部門(mén)信任水平對(duì)風(fēng)險(xiǎn)感知的影響,進(jìn)一步探究傳統(tǒng)食品消費(fèi)者對(duì)公共監(jiān)管部門(mén)信任對(duì)新興領(lǐng)域感知關(guān)系的影響。對(duì)明晰新興食品領(lǐng)域消費(fèi)者對(duì)公共監(jiān)管部門(mén)信任與風(fēng)險(xiǎn)感知關(guān)系以及通過(guò)不同領(lǐng)域調(diào)節(jié)感知關(guān)系,進(jìn)而降低新興食品風(fēng)險(xiǎn)水平,具有重要的理論與現(xiàn)實(shí)意義。論文從消費(fèi)者視角出發(fā),以備受爭(zhēng)議的新興食品為研究對(duì)象,參閱大量的國(guó)內(nèi)外文獻(xiàn),以marye信任模型為研究基礎(chǔ),選擇吉林省長(zhǎng)春市作為調(diào)研區(qū)域,通過(guò)調(diào)查問(wèn)卷的方式了解長(zhǎng)春市消費(fèi)者的基本情況、對(duì)新興食品食品的風(fēng)險(xiǎn)感知水平、消費(fèi)者對(duì)公共監(jiān)管部門(mén)在食品安全方面的信任水平等。用線(xiàn)性回歸的方式,探究新興食品領(lǐng)域消費(fèi)者對(duì)公共監(jiān)管部門(mén)信任水平與消費(fèi)者新興食品風(fēng)險(xiǎn)感知水平的影響關(guān)系,進(jìn)一步探究傳統(tǒng)食品領(lǐng)域消費(fèi)者公共監(jiān)管部門(mén)信任對(duì)新興領(lǐng)域感知關(guān)系的影響。有針對(duì)性提出了我國(guó)新興食品消費(fèi)者風(fēng)險(xiǎn)感知水平降低建策建議,為公共監(jiān)管部門(mén)提供了決策參考。研究結(jié)果顯示:(1)新興食品領(lǐng)域消費(fèi)者對(duì)公共監(jiān)管部門(mén)關(guān)注信任與新興食品風(fēng)險(xiǎn)感知是負(fù)向影響;(2)新興食品領(lǐng)域消費(fèi)者對(duì)公共監(jiān)管部門(mén)開(kāi)放信任與新興食品風(fēng)險(xiǎn)感知是負(fù)向影響;(3)傳統(tǒng)食品領(lǐng)域中的公共監(jiān)管部門(mén)關(guān)注信任會(huì)調(diào)節(jié)新興食品領(lǐng)域中消費(fèi)者對(duì)公共監(jiān)管部門(mén)關(guān)注信任與風(fēng)險(xiǎn)感知關(guān)系。本文從公共監(jiān)管部門(mén)角度提出相應(yīng)的政策建議。公共監(jiān)管部門(mén)應(yīng)該在新興食品領(lǐng)域有針對(duì)性的增加政策透明度,加強(qiáng)對(duì)新興食品的監(jiān)管,提高公共監(jiān)管部門(mén)公信力,增強(qiáng)消費(fèi)者信心。同時(shí)利用現(xiàn)有在傳統(tǒng)食品領(lǐng)域消費(fèi)者公共監(jiān)管部門(mén)開(kāi)放信任,調(diào)節(jié)新興領(lǐng)域信任與感知關(guān)系。
[Abstract]:With the rapid development of food technology. More and more food safety risk events bring different opinions on the emerging technology food. Some views put forward that emerging food has low consumption and high yield. The advantages of rich nutrition and small toxic effect are of great significance to the targeted nutrition supply, to deal with special disasters and to solve the problem of food shortage in some areas. At the same time, the full use of high technology of food to improve the efficiency of labor production. Reduce production costs, promote innovation in food technology. There are also some opponents of emerging food risks, such as food safety, potential damage to the environment. May affect the long-term physical and mental health of human beings. In the emerging food industry under the situation of continuous development of consumer perception of emerging food risk level. The impact of consumer trust level on risk perception through emerging food sector. To further explore the impact of traditional food consumers' trust in public regulatory authorities on the perceived relationship between emerging areas. To clarify the relationship between consumer trust and risk perception in emerging food sector and through different fields. Adjust the perception. Therefore, it is of great theoretical and practical significance to reduce the risk level of emerging food. From the perspective of consumers, this paper takes the controversial emerging food as the research object, and refers to a large number of domestic and foreign literature. On the basis of marye trust model, Changchun City of Jilin Province is selected as the research area, through the way of questionnaire to understand the basic situation of consumers in Changchun City, the level of risk perception of emerging food products. The level of consumer trust in food safety, etc., by linear regression. To explore the relationship between consumer trust level and risk perception level of emerging food in emerging food field. Further explore the traditional food field consumer public regulatory authority trust on the emerging areas of perceived relationship. Targeted recommendations for reducing the risk awareness level of emerging food consumers in China. The research results show that the consumers in emerging food field have a negative impact on public regulatory authorities' concern about trust and emerging food risk perception. (2) consumers in the field of emerging food have a negative impact on the open trust of public regulators and the perception of emerging food risks; 3). The concern of the public regulators in the traditional food field will regulate the relationship between the consumers' concern about trust and risk perception in the emerging food field. This paper puts forward corresponding policy suggestions from the perspective of the public regulatory authorities. Public regulators should aim to increase policy transparency in the emerging food sector. Strengthen the regulation of emerging food, improve the credibility of public regulators, enhance consumer confidence. At the same time, take advantage of the existing in the field of traditional food consumer public regulators open trust. Regulate the relationship between trust and perception in emerging areas.
