精益六西格瑪法在食品加工業(yè)中的應(yīng)用:雀巢持續(xù)卓越模式

【摘要】:精益六西格瑪法(Lean6Sigma)是一種融合了精益生產(chǎn)(Lean)及六西格瑪管理(6Sigma)兩種概念的綜合方法論:精益生產(chǎn),即通過卓越運(yùn)營(yíng)和持續(xù)改善最終達(dá)到減少浪費(fèi),增加最大產(chǎn)值的目的;而六西格瑪管理專注于通過使用統(tǒng)計(jì)工具減少生產(chǎn)過程中的變異(問題)。 19世紀(jì)80年代末,為了優(yōu)化汽車生產(chǎn)進(jìn)程,汽車制造商豐田公司最先采用了精益生產(chǎn)原則。出于同樣的目的,1985年摩托羅拉電信公司開發(fā)出六西格瑪管理法。精益六西格瑪正是結(jié)合了這兩種知名模式的更加高效的優(yōu)化技術(shù)。它以客戶為關(guān)注焦點(diǎn),幫助企業(yè)經(jīng)由降低成本和提高質(zhì)量更快速的獲利。最初精益六西格瑪法僅被用于汽車行業(yè),而后被成功運(yùn)用到其它商業(yè)領(lǐng)域,比如航空業(yè)和制藥業(yè),F(xiàn)如今,巨大的食品加工業(yè)雖擁有極大的發(fā)展?jié)摿?但在該方法的實(shí)行上仍處于落后狀態(tài)。因此本論文將重點(diǎn)通過對(duì)世界最大食品公司——雀巢及其卓越持續(xù)(NCE)的案例研究,來分析精益西格瑪在食品加工業(yè)的成功實(shí)施。 這篇論文旨在對(duì)精益六格瑪法進(jìn)行詳細(xì)介紹后,根據(jù)雀巢公司所提供的具體經(jīng)驗(yàn)數(shù)據(jù)來進(jìn)一步全面分析其卓越持續(xù)計(jì)劃的成功執(zhí)行,并展現(xiàn)該公司的歷史發(fā)展及現(xiàn)狀。此外,精益六西格瑪在食品業(yè)成功實(shí)施的因素將被總結(jié)提煉成一個(gè)通用的方法,以便將該方法全面推廣到整個(gè)食品行業(yè),而不再單獨(dú)考慮此行業(yè)中公司的規(guī)模。本論文最終目的在于,指出精益六西格瑪所面臨的主要挑戰(zhàn),發(fā)展趨勢(shì)及未來若干年內(nèi)可能的發(fā)展動(dòng)向。
[Abstract]:Lean six Sigma (Lean 6 Sigma) is a comprehensive methodology that combines the concepts of lean production and six Sigma management: lean production, that is, reducing waste and increasing the maximum output value through excellent operation and continuous improvement; Six Sigma Management focuses on reducing variability in production by using statistical tools. At the end of 1880s, in order to optimize the process of automobile production, Toyota, the carmaker, was the first to adopt the lean production principle. For the same purpose, in 1985 Motorola telecom developed the six sigma management method. Lean six sigma is a combination of these two well-known models. Efficient optimization technology. It focuses on customers, To help businesses make faster profits by reducing costs and improving quality. Lean six Sigma was initially used only in the automotive industry, and then successfully applied to other business areas, such as aviation and pharmaceuticals. Today, Although the enormous food processing industry has great potential for development, it is still lagging behind in the implementation of this method. Therefore, this paper will focus on the case study of Nestle, the world's largest food company, and its outstanding persistence. To analyze the successful implementation of Lean Sigma in the food processing industry. The purpose of this paper is to give a detailed introduction to Lean six GMA, and to further analyze the successful implementation of Nestl 茅's excellence sustainability plan based on the specific empirical data provided by Nestl 茅, and to show the historical development and current situation of the company. The factors that Lean six Sigma successfully implemented in the food industry will be refined into a generic approach that will be extended across the food industry without considering the size of the company in the industry alone. The main challenges, trends and possible trends of Lean six Sigma in the coming years are pointed out.
