【摘要】：以不同品牌的郫縣豆瓣醬為研究對(duì)象,通過聚合酶鏈?zhǔn)椒磻?yīng)-變性梯度凝膠電泳免培養(yǎng)技術(shù)分析樣品中微生物真菌菌群結(jié)構(gòu),并對(duì)典型條帶進(jìn)行測序,構(gòu)建系統(tǒng)發(fā)育進(jìn)化樹。結(jié)果表明:郫縣豆瓣醬真菌菌群種類較豐富,不同品牌的郫縣豆瓣醬真菌菌群既包含共有菌群又存在一定差異。假絲酵母(Candida sp.)、曲霉(Aspergillus)、魯氏酵母(Zygosaccharomyces rouxii)、奧默柯達(dá)酵母菌(Kodamaea ohmeri)是優(yōu)勢種群,尤其是黃曲霉(Aspergillus flavus)共有10個(gè)條帶,占整個(gè)測序條帶32.25%,表明郫縣豆瓣醬的生產(chǎn)應(yīng)特別注意防控黃曲霉。
[Abstract]:Different brands of Pixian bean paste were used to analyze the microbial fungal flora by polymerase chain reaction (PCR) and denaturing gradient gel electrophoresis (denaturing gradient gel electrophoresis). The typical bands were sequenced and phylogenetic tree was constructed. The results showed that the fungal flora of Pixian bean paste was rich in species, and the different brands of Pixian bean paste fungi not only contained common flora, but also had some differences. Candida sp., Aspergillus aspergillus, Zygosaccharomyces rouxiii, Kodamaea ohmeri were the dominant species, especially Aspergillus flavus. there were 10 bands, accounting for 32.25 bands, indicating that the production of Pixian bean paste should pay special attention to the prevention and control of Aspergillus flavus.
