【摘要】：隨著全球經(jīng)濟(jì)一體化和社會(huì)的迅速發(fā)展,綠色乳制品安全問(wèn)題已經(jīng)成為各國(guó)政府和人民普遍關(guān)注的議題。而在我國(guó),綠色乳制品安全問(wèn)題更加突出。2008年的“三鹿三聚氰胺”奶粉事件和2013年的蟣叵天然奶粉肉毒桿菌”事件使得中國(guó)乳業(yè)一度陷入“內(nèi)憂(yōu)外患”的尷尬境地。作為綠色乳制品產(chǎn)業(yè)鏈的核心,綠色乳制品生產(chǎn)企業(yè)實(shí)施全程質(zhì)量控制成為保障綠色乳制品質(zhì)量安全的基礎(chǔ),是切實(shí)解決綠色乳制品質(zhì)量安全問(wèn)題的有效措施。W乳業(yè)公司是我國(guó)具有較高知名度的綠色乳制品生產(chǎn)企業(yè),擁有較大規(guī)模的綠色乳制品生產(chǎn)能力,其綠色乳制品已經(jīng)形成了具有一定知名度和美譽(yù)度的品牌,但其在全程質(zhì)量控制中依然存在諸多問(wèn)題,所以針對(duì)W乳業(yè)綠色乳制品全程質(zhì)量控制進(jìn)行研究,對(duì)于提高W乳業(yè)綠色乳制品的產(chǎn)品質(zhì)量和競(jìng)爭(zhēng)力,促進(jìn)綠色乳制品產(chǎn)業(yè)的發(fā)展具有重要意義。論文首先明確了綠色乳制品全程質(zhì)量控制的相關(guān)概念,并進(jìn)一步概括了供應(yīng)鏈質(zhì)量管理理論、信息不對(duì)稱(chēng)理論和企業(yè)社會(huì)責(zé)任理論的基本內(nèi)容。在這些理論的指導(dǎo)下,闡述了W乳業(yè)綠色乳制品全程質(zhì)量控制的現(xiàn)狀,指出了其在原料奶供應(yīng)與采收、綠色乳制品生產(chǎn)加工等環(huán)節(jié)質(zhì)量控制存在的問(wèn)題,構(gòu)建了包含全程質(zhì)量控制資源投入指標(biāo)、過(guò)程指標(biāo)和產(chǎn)出成果指標(biāo)在內(nèi)的W乳業(yè)綠色乳制品全程質(zhì)量控制水平評(píng)價(jià)指標(biāo)體系,并運(yùn)用層次分析和模糊綜合評(píng)價(jià)相結(jié)合的方法對(duì)其進(jìn)行綜合評(píng)價(jià),通過(guò)對(duì)評(píng)價(jià)結(jié)果分析,得出了全程質(zhì)量控制資源投入不足、原料奶采收環(huán)節(jié)、綠色乳制品加工環(huán)節(jié)以及銷(xiāo)售環(huán)節(jié)質(zhì)量控制力度不夠是制約W乳業(yè)綠色乳制品全程質(zhì)量控制水平提高的四個(gè)主要因素,據(jù)此提出了完善W乳業(yè)綠色乳制品全程質(zhì)量控制的對(duì)策建議,試圖為W乳業(yè)提高其綠色乳制品質(zhì)量提供有效的參考和借鑒。
[Abstract]:With the global economic integration and the rapid development of society, the safety of green dairy products has become a common concern of governments and people. In China, the safety problem of green dairy products is even more prominent. The "Sanlu melamine" milk powder incident in 2008 and the "Botox Botox" incident in 2013 made the Chinese dairy industry once fall into an awkward situation of "internal and external troubles". As the core of green dairy industry chain, the whole process quality control of green dairy products production enterprises has become the basis to ensure the quality and safety of green dairy products. It is an effective measure to solve the problem of quality and safety of green dairy products. W Dairy Company is a green dairy production enterprise with high reputation in our country and has a large scale of green dairy production capacity. Its green dairy products have formed a brand with certain popularity and reputation, but there are still many problems in the whole process quality control, so the whole process quality control of green dairy products in W dairy industry is studied. It is of great significance to improve the quality and competitiveness of green dairy products in W dairy industry and promote the development of green dairy products industry. This paper firstly defines the related concepts of the whole process quality control of green dairy products, and further generalizes the basic contents of supply chain quality management theory, information asymmetry theory and corporate social responsibility theory. Under the guidance of these theories, this paper expounds the present situation of the whole process quality control of green dairy products in W dairy industry, and points out the problems existing in the quality control of raw milk supply and collection, production and processing of green dairy products, etc. The evaluation index system of the whole process quality control level of green dairy products in W dairy industry, including the input index of the whole process quality control resource, the process index and the output achievement index, was constructed. Through the analysis of the evaluation results, the insufficient input of the whole quality control resources and the link of collecting raw material milk are obtained. The insufficient quality control of green dairy products processing and marketing links are the four main factors restricting the improvement of the whole process quality control level of green dairy products in W dairy industry. The countermeasures and suggestions for improving the quality control of green dairy products in W dairy industry are put forward in this paper in order to provide an effective reference for W dairy industry to improve the quality of green dairy products.
