【摘要】：在我國(guó)居民日常食品消費(fèi)中,果蔬類(lèi)農(nóng)產(chǎn)品占據(jù)的比重逐年增加。然而,問(wèn)題黃瓜、染色花椒和毒豆芽等事件引發(fā)了公眾對(duì)果蔬類(lèi)農(nóng)產(chǎn)品質(zhì)量安全的擔(dān)憂。果蔬冷鏈斷鏈,食品安全檢測(cè)不到位,市場(chǎng)監(jiān)管不力等原因均導(dǎo)致果蔬類(lèi)農(nóng)產(chǎn)品安全問(wèn)題頻發(fā)。為了進(jìn)一步穩(wěn)定果蔬類(lèi)農(nóng)產(chǎn)品市場(chǎng)秩序,確保果蔬質(zhì)量安全,實(shí)現(xiàn)果蔬類(lèi)農(nóng)產(chǎn)品冷鏈物流信息溯源是食品安全機(jī)制的關(guān)鍵環(huán)節(jié),也是食品安全管理的必然趨勢(shì)。通過(guò)信息溯源,可以準(zhǔn)確獲取果蔬類(lèi)農(nóng)產(chǎn)品在供應(yīng)鏈各環(huán)節(jié)上的生產(chǎn)信息、加工信息和流通信息等,實(shí)現(xiàn)果蔬類(lèi)農(nóng)產(chǎn)品全程流通透明化。本文就果蔬類(lèi)農(nóng)產(chǎn)品溯源模式、溯源關(guān)鍵技術(shù)及溯源系統(tǒng)總體設(shè)計(jì)這幾個(gè)方面展開(kāi)研究。首先,由于果蔬類(lèi)農(nóng)產(chǎn)品流通渠道復(fù)雜,研究選取典型的三種流通模式即“農(nóng)貿(mào)市場(chǎng)流通模式”、“龍頭企業(yè)主導(dǎo)的農(nóng)超對(duì)接流通模式”和“電子商務(wù)流通模式”,應(yīng)用流程分析方法,優(yōu)化果蔬類(lèi)農(nóng)產(chǎn)品冷鏈物流業(yè)務(wù)流程,參照HACCP、GAP和現(xiàn)有的果蔬安全相關(guān)標(biāo)準(zhǔn),篩選出冷鏈物流各環(huán)節(jié)的過(guò)程溯源指標(biāo)和安全溯源指標(biāo)。其次,研究根據(jù)果蔬類(lèi)農(nóng)產(chǎn)品具有較高的溫度敏感性,應(yīng)用改進(jìn)的拉依達(dá)準(zhǔn)則和自適應(yīng)數(shù)據(jù)融合方法,建立基于時(shí)間—空間的冷鏈物流溫度數(shù)據(jù)融合模型,提高溫度數(shù)據(jù)融合精度。最后,研究根據(jù)果蔬類(lèi)農(nóng)產(chǎn)品冷鏈物流信息溯源需求,應(yīng)用系統(tǒng)分析方法,對(duì)果蔬類(lèi)農(nóng)產(chǎn)品冷鏈物流信息溯源系統(tǒng)進(jìn)行總體設(shè)計(jì)。本文的主要結(jié)論包括:(1)提出了果蔬類(lèi)農(nóng)產(chǎn)品冷鏈物流信息溯源模型,該模型確定了以流轉(zhuǎn)信息為主的過(guò)程溯源指標(biāo)和果蔬質(zhì)量關(guān)鍵信息為主的安全溯源指標(biāo),為果蔬類(lèi)農(nóng)產(chǎn)品冷鏈物流信息溯源系統(tǒng)的總體設(shè)計(jì)奠定基礎(chǔ)(2)建立基于時(shí)間—空間的冷鏈溫度數(shù)據(jù)融合模型,修正了誤差較大的傳感器,實(shí)驗(yàn)證明,該算法與平均值算法相比,提高了數(shù)據(jù)融合精度。(3)設(shè)計(jì)了果蔬類(lèi)農(nóng)產(chǎn)品冷鏈物流信息溯源系統(tǒng),提出每種溯源模式的溯源系統(tǒng)設(shè)計(jì)需求,實(shí)現(xiàn)果蔬類(lèi)農(nóng)產(chǎn)品冷鏈物流信息的記錄與查詢(xún),規(guī)范各環(huán)節(jié)主體行為,提高果蔬類(lèi)農(nóng)產(chǎn)品的安全水平。
[Abstract]:In the daily food consumption of our country, the proportion of fruit and vegetable agricultural products is increasing year by year.However, problems with cucumbers, peppers and bean sprouts have raised concerns about the quality and safety of fruits and vegetables.The cold chain breakage of fruit and vegetable, the food safety detection is not in place, the market supervision is weak and so on, which lead to the frequent safety problems of fruit and vegetable agricultural products.In order to further stabilize the market order of fruits and vegetables and ensure the quality and safety of fruits and vegetables, it is the key link of food safety mechanism and the inevitable trend of food safety management to realize the traceability of cold chain logistics information of fruits and vegetables agricultural products.By tracing the source of the information, we can accurately obtain the production information, processing information and circulation information of the fruits and vegetables agricultural products in each link of the supply chain, so as to realize the transparency of the whole course of the circulation of fruits and vegetables agricultural products.In this paper, the traceability model, the key technology of traceability and the overall design of traceability system are studied.First of all, due to the complexity of the distribution channels of fruits and vegetables, the study selects three typical circulation modes, namely, "the circulation mode of farmers' market", "the mode of agricultural super docking circulation led by leading enterprises" and "the mode of electronic commerce circulation".The process traceability index and safety traceability index of each link of cold chain logistics were selected according to HACCPGAP and the existing standards of fruit and vegetable safety by using the method of process analysis to optimize the business process of cold chain logistics of fruits and vegetables.Secondly, according to the high temperature sensitivity of fruits and vegetables, an improved Laida criterion and adaptive data fusion method are applied to establish the temperature data fusion model of cold-chain logistics based on time-space.Improve the precision of temperature data fusion.Finally, according to the demand of cold chain logistics information traceability of fruits and vegetables, the system of cold chain logistics information traceability of fruit and vegetable agricultural products is designed by system analysis method.The main conclusions of this paper include: (1) A cold chain logistics information traceability model for fruits and vegetables is proposed, which determines the process traceability index based on the flow information and the safety traceability index based on the key information of fruit and vegetable quality.For the general design of the cold chain logistics information traceability system of fruits and vegetables, the paper establishes the fusion model of temperature data of cold chain based on time and space, and corrects the sensor with large error. The experimental results show that the algorithm is compared with the average value algorithm.Improved the precision of data fusion. 3) designed the cold chain logistics information traceability system of fruit and vegetable products, put forward the design requirements of each traceability model, and realized the record and query of the cold chain logistics information of fruits and vegetables agricultural products.Standardize the behavior of the main body of each link, improve the safety level of fruits and vegetables agricultural products.
