乳制品供應(yīng)鏈的溯源體系與預(yù)警模型研究

【摘要】:近年來我國(guó)乳制品質(zhì)量安全事故頻發(fā),不僅危害了消費(fèi)者的身體健康,還嚴(yán)重影響了國(guó)內(nèi)乳制品的市場(chǎng)銷售,給企業(yè)和國(guó)家造成了巨大的經(jīng)濟(jì)損失。為了促進(jìn)乳制品行業(yè)的健康發(fā)展、挽回顧客的消費(fèi)信心,必須加強(qiáng)乳制品供應(yīng)鏈的安全風(fēng)險(xiǎn)控制,保證乳制品的生產(chǎn)安全和產(chǎn)品質(zhì)量。 根據(jù)研究食品安全“從農(nóng)田(牧場(chǎng))到餐桌”的整體管理理念、風(fēng)險(xiǎn)分析、透明性原則等,建立和發(fā)展食品安全溯源體系和預(yù)警管理,既是提高我國(guó)食品安全與風(fēng)險(xiǎn)管理水平的要求,也是全球食品安全管理的發(fā)展趨勢(shì)。因此,本文以供應(yīng)鏈為視角,以乳制品為研究對(duì)象,在深入分析乳制品供應(yīng)鏈總體業(yè)務(wù)流程的基礎(chǔ)上,建立基于信息采集、信息記錄、信息傳遞、信息管理與信息查詢的溯源平臺(tái),同時(shí)實(shí)現(xiàn)供應(yīng)鏈溯源查詢與安全風(fēng)險(xiǎn)預(yù)警管理的功能,最終形成“事前預(yù)警、事中控制、事后召回”的全方位安全管理模式。 在本文中,首先對(duì)乳制品供應(yīng)鏈各個(gè)業(yè)務(wù)環(huán)節(jié)進(jìn)行詳細(xì)分析,并通過對(duì)業(yè)務(wù)流程進(jìn)行Petri網(wǎng)建模,建立了乳制品供應(yīng)鏈的關(guān)鍵溯源信息流鏈路;分析了供應(yīng)鏈上采用的數(shù)據(jù)信息采集技術(shù)與編碼方案,對(duì)各業(yè)務(wù)環(huán)節(jié)的信息采集和數(shù)據(jù)關(guān)聯(lián)過程進(jìn)行了闡述,并以關(guān)鍵溯源信息流鏈路為基礎(chǔ)逐步形成完整的供應(yīng)鏈溯源信息網(wǎng)絡(luò);通過對(duì)比分析現(xiàn)有溯源模式的優(yōu)缺點(diǎn),提出了適合乳制品供應(yīng)鏈的混合式溯源模式以及橫向與縱向結(jié)合的兩階段查詢方式;然后以供應(yīng)鏈信息采集和數(shù)據(jù)分析應(yīng)用為目的,立足消費(fèi)者、企業(yè)和政府監(jiān)管部門對(duì)溯源信息的查詢需求,建立溯源平臺(tái)。 基于溯源平臺(tái)建立的供應(yīng)鏈數(shù)據(jù)信息的采集與應(yīng)用基礎(chǔ),本文設(shè)計(jì)并實(shí)現(xiàn)了以預(yù)警模型為核心的乳制品供應(yīng)鏈安全風(fēng)險(xiǎn)預(yù)警管理功能。在該部分內(nèi)容上,本文首先明確了乳制品供應(yīng)鏈安全風(fēng)險(xiǎn)預(yù)警體系的結(jié)構(gòu)和運(yùn)作流程,并分析了監(jiān)控預(yù)警與溯源的綜合應(yīng)用關(guān)系;然后,基于乳制品行業(yè)內(nèi)的DHI報(bào)告以及HACCP管理規(guī)范,結(jié)合以重要性為主的指標(biāo)選取原則,建立乳制品供應(yīng)鏈安全風(fēng)險(xiǎn)預(yù)警指標(biāo)體系;隨后,以指標(biāo)體系為依據(jù),建立基于BP神經(jīng)網(wǎng)絡(luò)的預(yù)警模型,,并給出預(yù)警算例;最后,基于案例推理(CBR)理論分析了預(yù)警知識(shí)庫(kù)的設(shè)計(jì)過程及其設(shè)計(jì)內(nèi)容。
[Abstract]:In recent years, the frequent accidents of dairy products quality and safety in our country not only endanger the health of consumers, but also seriously affect the market sales of domestic dairy products. In order to promote the healthy development of dairy industry and restore consumer confidence, it is necessary to strengthen the safety risk control of dairy supply chain and ensure the production safety and product quality of dairy products. According to the overall management concept, risk analysis and transparency principle of food safety "from farmland (pasture) to dining table", the establishment and development of traceability system and early warning management of food safety, It is not only the requirement of improving the level of food safety and risk management in China, but also the development trend of global food safety management. Based on in-depth analysis of the overall business process of dairy supply chain, a traceability platform based on information collection, information recording, information transmission, information management and information query is established. At the same time, the function of traceability inquiry and early warning management of safety risk in supply chain is realized, and the omni-directional safety management mode of "forewarning beforehand, controlling in the event, recalling afterwards" is formed. In this paper, every business link of dairy supply chain is analyzed in detail, and the key traceability information flow link of dairy product supply chain is established by modeling business process with Petri net. This paper analyzes the data information collection technology and coding scheme used in the supply chain, and expounds the process of information collection and data association in various business links. Based on the key traceability information flow link, a complete supply chain traceability information network is gradually formed, and the advantages and disadvantages of the existing traceability modes are compared and analyzed. The mixed traceability mode suitable for dairy supply chain and the two stage query mode of horizontal and vertical combination are put forward, and the purpose of the information collection and data analysis of supply chain is to base on consumers. Enterprises and government regulatory authorities for traceability information query needs, the establishment of traceability platform. Based on the collection and application of supply chain data information based on traceability platform, this paper designs and implements the early-warning management function of dairy supply chain security risk based on early-warning model. This paper firstly clarifies the structure and operation process of dairy supply chain security risk warning system, and analyzes the comprehensive application relationship between monitoring, warning and traceability, and then, based on the DHI report and HACCP management specification in dairy industry, Combining with the principle of selecting the important indexes, the paper establishes the early warning index system of dairy supply chain security risk. Then, based on the index system, the early warning model based on BP neural network is established, and an example of early warning is given. Finally, Based on CBR (case based reasoning) theory, the design process and content of early warning knowledge base are analyzed.
