【摘要】：可裝卸式蓄冷保溫箱組裝、拆卸方便,是蓄冷保溫箱發(fā)展的趨勢(shì)。本文實(shí)驗(yàn)研究了平菇的冷鏈運(yùn)輸效果,測(cè)定箱內(nèi)空氣溫度、平菇中心溫度和蓄冷劑溫度變化,計(jì)算可裝卸蓄冷箱冷鏈運(yùn)輸過(guò)程縫隙漏熱率,每隔30 h對(duì)平菇取樣進(jìn)行感官評(píng)定,測(cè)定其營(yíng)養(yǎng)指標(biāo)變化。結(jié)果表明:當(dāng)環(huán)境溫度25℃時(shí),56 h后蓄冷劑完全液化,比預(yù)計(jì)時(shí)間少8 h,表明蓄冷劑需求量的估算值偏小,可以使用系數(shù)修正法予以調(diào)整;可裝卸式蓄冷保溫箱縫隙漏熱率達(dá)到12.97%,縫隙漏熱量占比大,應(yīng)優(yōu)化組裝工藝;實(shí)驗(yàn)60 h與0 h相比,感官評(píng)分下降3.53%,可溶性固形物含量下降5.9%;可溶性蛋白質(zhì)含量下降4.2%;維生素C含量下降9.96%,實(shí)驗(yàn)過(guò)程平菇商品價(jià)值、營(yíng)養(yǎng)價(jià)值變化不大。
