蔗糖聚酯對人體膳食能量攝入的影響

【摘要】:目的研究油脂替代物蔗糖聚酯對人體膳食能量攝入的影響。方法采用隨機(jī)雙盲交叉設(shè)計,63名志愿者分別食用3組實(shí)驗(yàn)蛋糕,使蔗糖聚酯的攝入量分別為0 g/d、11 g/d、22 g/d,每組蛋糕實(shí)驗(yàn)期1 d,間隔3 d,填寫24 h膳食記錄表。結(jié)果日常膳食、攝入蔗糖聚酯0 g/d、11 g/d和22 g/d的能量攝入分別為(8 672.82±2 679.66)k J、(9 507.35±2 343.46)k J、(8 558.45±2 241.44)k J和(8 390.95±2 319.36)k J,脂肪供能比分別為(36.09±9.79)%、(37.41±6.13)%、(32.72±6.73)%和(29.63±7.73)%,攝入蔗糖聚酯較攝入普通脂肪的膳食總能量減少,脂肪供能比減少,且存在劑量反應(yīng)關(guān)系。結(jié)論蔗糖聚酯與普通脂肪相比,能降低膳食總能量攝入和脂肪供能比,可作為一種良好的油脂替代物得到廣泛的應(yīng)用。
[Abstract]:Objective to study the effect of sucrose polyester on dietary energy intake. Methods A randomized double-blind cross-design of 63 volunteers was used to eat three groups of experimental cakes. The intake of sucrose polyester was 0 g / d ~ (11) g / d ~ (22) g / d respectively. The experiment period of each group was 1 day, the interval was 3 days, and the 24 h dietary record was filled out. Results the energy intake of sucrose polyester 0 g / d and 22 g / d were (8 672.82 鹵2 679.66) k J, (9 507.35 鹵2 343.46) k J, (8 558.45 鹵2 241.44) k J) and (8 390.95 鹵2 319.36) k J,), (36.09 鹵9.79), (37.41 鹵6.13)%, (32.72 鹵6.73)% and (29.63 鹵7.73)%, respectively. The ratio of fat to energy was reduced, and there was a dose-response relationship. Conclusion compared with ordinary fat, sucrose polyester can reduce the total dietary energy intake and fat energy supply ratio, and can be widely used as a good oil substitute.
