2010-2012年合肥市食品中食源性致病菌監(jiān)測結果分析

【摘要】:目的通過分析安徽省合肥市食品中食源性致病菌監(jiān)測工作的情況,為食品安全風險預警及監(jiān)督管理提供科學依據(jù)。方法按照《全國食源性致病菌監(jiān)測工作手冊》對合肥市2010-2012年食源性致病菌監(jiān)測資料進行統(tǒng)計分析。結果 2010-2012年共檢測食品樣品753份,檢出致病菌133株,總檢出率17.66%;樣品中霉菌和金黃色葡萄球菌檢出率較高,分別為6.11%和5.71%;菌落總數(shù)與大腸菌群超標率分別為40.00%和38.62%,其中桶裝飲用水菌落總數(shù)超標率最高,達到為65.15%。結論合肥市居民食品中存在食源性致病菌污染,其中非發(fā)酵豆制品、桶裝飲用水、熟制面米制品、水產品是主要污染食品品種,監(jiān)測食品的菌落總數(shù)和大腸菌群超標問題突出,應加強針對性監(jiān)管力度。
[Abstract]:Objective to provide scientific basis for early warning of food safety risk and supervision and management by analyzing the situation of foodborne pathogenic bacteria monitoring in food in Hefei, Anhui Province. Methods according to the National Manual of Food-borne Pathogens Surveillance, the data of Food-borne Pathogens Surveillance in Hefei from 2010 to 2012 were analyzed statistically. Results A total of 753 food samples were detected from 2010 to 2012, 133 strains of pathogenic bacteria were detected, the total detection rate was 17.66%, and the detection rate of fungi and Staphylococcus aureus was higher in the samples. The total number of bacteria and coliform bacteria exceeded the standard rate of 40.00% and 38.62 respectively. Conclusion there is food pathogenic bacteria contamination in the food of residents in Hefei, in which non-fermented soybean products, barrelled drinking water, cooked rice products and aquatic products are the main kinds of contaminated food. The problems of monitoring the total number of bacteria and coliform bacteria in food are obvious. We should strengthen targeted supervision.
