【摘要】：目的本研究數(shù)據(jù)來源于聯(lián)合國千年發(fā)展基金“改善中國最弱勢(shì)婦女和兒童群體的營養(yǎng)、食品安全和食品保障狀況”項(xiàng)目。調(diào)查云南與陜西貧困地區(qū)中學(xué)生的營養(yǎng)知識(shí)、態(tài)度和行為現(xiàn)狀,分析其影響因素,為我國貧困地區(qū)初中生編寫營養(yǎng)與食品安全教材提供信息,同時(shí)為今后開展中學(xué)生營養(yǎng)與食品安全教育干預(yù)提供依據(jù)。 方法先采用隨機(jī)抽樣的方法,選取貧困地區(qū)兩個(gè)貧困縣云南會(huì)澤縣與陜西鎮(zhèn)安縣,然后采用整群抽樣的方法,對(duì)兩個(gè)貧困縣的8所中學(xué)24個(gè)班級(jí)的1002名學(xué)生進(jìn)行了營養(yǎng)與食品安全的知識(shí)、態(tài)度、行為的問卷調(diào)查。收集學(xué)生家庭的一般情況基線資料和KAP問卷資料,進(jìn)行營養(yǎng)與食品安全知識(shí)、態(tài)度、行為情況的比較分析。 結(jié)果目標(biāo)學(xué)校的初中學(xué)生營養(yǎng)與食品安全基礎(chǔ)知識(shí)較為缺乏,平均得分為7.51±3.43分,答題正確率為41.7%±19.0%。僅“不良飲食行為與合理飲食”條目的正確率為55.7%±24.1%較高�！盃I養(yǎng)素缺乏癥”條目正確率為34.8%±27.7%、“營養(yǎng)素功能與膳食來源”條目正確率為36.9%±34.4%和“食品安全基本知識(shí)”條目正確率為27.3%±19.2%都較低,為知識(shí)部分的薄弱環(huán)節(jié)。單因素分析顯示性別不同的學(xué)生、留守與非留守學(xué)生和父母親文化程度不同的學(xué)生知識(shí)部分得分均不同,差異具有統(tǒng)計(jì)學(xué)意義,P值分別為0.036、0.032和0.000.logistic回歸分析顯示,民族和年齡進(jìn)入回歸方程,OR值分別為1.928和1.247,提示年齡越大,營養(yǎng)與食品安全知識(shí)的知曉率越高；漢族學(xué)生比少數(shù)民族學(xué)生知識(shí)知曉率高。 態(tài)度方面,對(duì)接受營養(yǎng)與食品安全教育的態(tài)度較好,平均得分為4.47±2.45分,積極態(tài)度占的比例為80.0%±14.8%。兩縣學(xué)生在“報(bào)紙、雜志和電視廣告上關(guān)于營養(yǎng)與食品安全的信息是可靠的”條目與“一個(gè)人兒童時(shí)期的營養(yǎng)狀況對(duì)于整個(gè)一生的健康是很重要的”條目上態(tài)度差異有統(tǒng)計(jì)學(xué)意義,P值分別為0.007和0.013。logistic回歸分析顯示,民族和不同地區(qū)兩個(gè)因素進(jìn)入方程，OR值分別為2.325和0.327,提示漢族學(xué)生比少數(shù)民族學(xué)生營養(yǎng)與食品安全知識(shí)態(tài)度更為積極,鎮(zhèn)安縣地區(qū)學(xué)生的態(tài)度更為積極。 行為方面,兩縣學(xué)生健康行為的比例比較小,行為部分平均得分3.75±1.13分,其中會(huì)澤縣學(xué)生平均得分3.83±0.98分,鎮(zhèn)安縣學(xué)生平均得分3.62±1.31分,會(huì)澤縣學(xué)生較高,P=0.006。目標(biāo)學(xué)生對(duì)于早餐、水果、蔬菜、肉類、奶類、蛋類、豆類食品的攝入頻率均不足,僅有注意食物搭配的條目健康行為率超過50%,其他條目的健康行為率均比較低。logistic回歸分析顯示,性別與父親的文化程度進(jìn)入方程,OR值分別為0.702和1.303,提示女學(xué)生比男學(xué)生營養(yǎng)與食品安全行為更健康,父親文化程度越高,還在的飲食行為更健康。 結(jié)論1.會(huì)澤縣和鎮(zhèn)安縣初中生營養(yǎng)與食品安全知識(shí)比較欠缺,飲食行為不健康,有待改善,但是對(duì)營養(yǎng)與食品安全的態(tài)度積極,適合開展宣教活動(dòng)。2.年齡、性別、父母的文化程度、民族與是否留守都是學(xué)生營養(yǎng)與食品安全知識(shí)得分的主要影響因素。
[Abstract]:Objective this study was based on the United Nations Millennium Development Fund "improving the nutrition, food safety and food security status of the most vulnerable women and children in China". To investigate the nutritional knowledge, attitude and behavior status of middle school students in Yunnan and Shaanxi, and to analyze its influence factors and to prepare nutrition for junior high school students in poor areas in China. It provides information for food safety textbooks and provides a basis for future education intervention on nutrition and food safety among middle school students.
Methods the method of random sampling was used to select two poverty-stricken counties, Huize County, Yunnan Huize county and Zhen An county, Shaanxi, and then adopt a cluster sampling method to carry out a questionnaire survey on nutrition and food safety of 1002 students in 24 classes of 8 middle schools in two poverty-stricken counties. Baseline data and KAP questionnaires were used to compare knowledge, attitude and behavior of nutrition and food safety.
Results the basic knowledge of nutrition and food safety of junior middle school students in target schools was short, the average score was 7.51 + 3.43. The correct rate of correct answer rate was 41.7% + 19.0%. and the correct rate of "bad eating behavior and reasonable diet" was 55.7% + 24.1%. The correct rate of "nutritional deficiency" was 34.8% + 27.7%, "nutrition function and the function of nutrition deficiency". The correct rate of dietary sources is 36.9% + 34.4% and the correct rate of "basic knowledge of food safety" is 27.3% + 19.2%, which is a weak link in the knowledge part. Single factor analysis shows that the students with different sex are different in the knowledge part of the students who are different from the non left behind students and parents. The P values of 0.036,0.032 and 0.000.logistic regression analysis showed that national and age were entered into the regression equation, and the value of OR was 1.928 and 1.247 respectively. The higher the age, the higher the knowledge of nutrition and food safety, and the higher knowledge of Han students than those of the minority students.
In attitude, the attitude to nutrition and food safety education is better, the average score is 4.47 + 2.45 points, the proportion of positive attitude is 80% + 14.8%. two county students in "newspapers, magazines and TV advertisements on nutrition and food safety information is reliable" items and "a person's childhood nutrition status for the whole one." The health is very important. The difference in attitude is statistically significant. The P value of 0.007 and 0.013.logistic regression analysis showed that two factors in ethnic and different regions entered the equation, and the value of OR was 2.325 and 0.327 respectively, suggesting that Han students were more active than minority students in nutrition and food safety knowledge. The student's attitude is more active.
In behavior, the proportion of healthy behavior of students in two counties was small, and the average score of behavior was 3.75 + 1.13 points. The average score of the students in Huize county was 3.83 + 0.98 points, the average score of the students in Zhen An county was 3.62 + 1.31, the students in Huize county were higher. The intake frequency of P=0.006. target students for breakfast, water, vegetables, meat, milk, eggs, legumes Not enough, the healthy behavior rate of the items with only food collocation was over 50%. The healthy behavior rates of other items were low.Logistic regression analysis showed that gender and father's educational level entered the equation, and the value of OR was 0.702 and 1.303 respectively, suggesting that female students were healthier than male students in nutrition and food safety behavior, and the higher the father's education level, The eating behavior is healthier.
Conclusion 1. the knowledge of nutrition and food safety in junior middle school students in Huize and Zhen An county is short of knowledge, eating behavior is not healthy and needs to be improved, but the attitude to nutrition and food safety is positive. It is suitable to carry out.2. age, sex, parents' educational level, National and food safety knowledge, which are the main points of students' knowledge of nutrition and food safety. Influencing factors.
