熱量標(biāo)簽中數(shù)據(jù)精確性對(duì)熱量感知與食品選擇的影響研究

【摘要】:肥胖問題在世界各國(guó)越來越普遍和嚴(yán)重,許多國(guó)家采用食品熱量信息干預(yù),如強(qiáng)制提供卡路里信息,以期控制肥胖率的增長(zhǎng)。但是只提供卡路里信息,很多人沒有概念,也不在意,實(shí)踐效果遠(yuǎn)未達(dá)到預(yù)期。最近,有科學(xué)家呼吁用燃燒食物熱量運(yùn)動(dòng)信息替代食品包裝上的卡路里信息,以幫助消費(fèi)者選擇低熱量健康食品。以往與燃燒食物熱量運(yùn)動(dòng)信息相關(guān)的研究中,運(yùn)動(dòng)信息的呈現(xiàn)方式及標(biāo)識(shí)的數(shù)據(jù)精確性不相一致,而數(shù)字的精確性會(huì)影響認(rèn)知,因而本文主要研究?jī)蓚(gè)問題:燃燒食物熱量運(yùn)動(dòng)數(shù)據(jù)精確性是否會(huì)導(dǎo)致熱量感知偏差?如果會(huì),這種判斷偏差是否會(huì)影響食品選擇?我們提出,人們傾向于高估精確運(yùn)動(dòng)數(shù)據(jù)下的食品熱量相對(duì)于大小幅度類似但精確性較低或圓整的運(yùn)動(dòng)數(shù)據(jù),稱為“燃燒食物熱量運(yùn)動(dòng)數(shù)據(jù)精確效應(yīng)”,而且這種效應(yīng)能抑制消費(fèi)者選擇高熱量非健康食品。本研究主要采取實(shí)驗(yàn)法,設(shè)計(jì)了六個(gè)互相關(guān)聯(lián)的實(shí)驗(yàn)來驗(yàn)證提出的假設(shè)。實(shí)驗(yàn)1和實(shí)驗(yàn)2分別以文本說明形式和圖文標(biāo)簽形式呈現(xiàn)運(yùn)動(dòng)信息,檢驗(yàn)以上精確效應(yīng)的存在;實(shí)驗(yàn)3則深入研究該精確效應(yīng)發(fā)生的心理機(jī)制——熱量感知喚醒度的中介效應(yīng);實(shí)驗(yàn)4和實(shí)驗(yàn)5通過不同量級(jí)單位表示數(shù)量信息來探討該精確效應(yīng)的邊界條件;實(shí)驗(yàn)6是一個(gè)現(xiàn)場(chǎng)實(shí)驗(yàn),研究真實(shí)食品決策情境下運(yùn)動(dòng)數(shù)據(jù)精確性對(duì)食品選擇的影響。通過訪談、問卷和實(shí)驗(yàn)刺激等方式收集了大量的實(shí)驗(yàn)數(shù)據(jù),運(yùn)用SPSS進(jìn)行方差分析、bootstrap中介檢驗(yàn)及卡方檢驗(yàn)等得出以下結(jié)論:(1)燃燒食物熱量運(yùn)動(dòng)數(shù)據(jù)精確性會(huì)導(dǎo)致熱量感知偏差,人們認(rèn)為越精確的運(yùn)動(dòng)數(shù)據(jù)對(duì)應(yīng)更高的食物熱量,例如,被試會(huì)錯(cuò)誤地判斷徒步行走4.87公里燃燒的巧克力熱量高于徒步行走5公里時(shí);(2)揭示了以上精確效應(yīng)發(fā)生的心理機(jī)制—運(yùn)動(dòng)數(shù)據(jù)越精確,越能引起消費(fèi)者的關(guān)注和重視,喚醒負(fù)面情緒,進(jìn)而賦予熱量信息更高的權(quán)重,判斷食物熱量更高;(3)不同量級(jí)單位表示信息(數(shù)據(jù)本身大小級(jí)別)會(huì)對(duì)以上精確效應(yīng)產(chǎn)生調(diào)節(jié)作用——當(dāng)以大單位(小數(shù)字)表示運(yùn)動(dòng)信息時(shí),精確效應(yīng)非常顯著,但以小單位(大數(shù)字)表示運(yùn)動(dòng)信息時(shí),精確效應(yīng)消失了;(4)以精確運(yùn)動(dòng)數(shù)據(jù)呈現(xiàn)相對(duì)熱量信息,可輕推消費(fèi)者選擇低熱量健康食品。
[Abstract]:The problem of obesity is becoming more and more common in all countries of the world . Food calorie information intervention is adopted in many countries to control the growth of obesity . However , only calorie information is provided . Many people do not have the concept and the accuracy of identification is not consistent . In the past , scientists called for the use of calorie movement information for burning food to replace calorie information on food packaging .
Experiment 3 studies the mediating effect of the psychological mechanism _ heat perceived wake - up degree of the exact effect .
Experiment 4 and Experiment 5 discuss the boundary conditions of the exact effect by means of the quantity information of different magnitude units ;
Experiment 6 is an off - site experiment to study the influence of motion data accuracy on food selection in real food decision - making situation . Through interviews , questionnaires and experimental stimulation , a lot of experimental data is collected . The results are as follows : ( 1 ) The accuracy of calorie movement data of burning food can lead to thermal perception deviation .
( 2 ) revealing the psychological mechanism of the above precise effect - the more accurate the movement data , the more the attention and attention of the consumer can be caused , the negative emotion is aroused , the weight of the heat information is further added , and the food heat is judged to be higher ;
( 3 ) The information ( data itself size level ) of different magnitude units can adjust the above exact effect _ when the motion information is represented by large units ( small numbers ) , the exact effect is very significant , but when the motion information is represented by small units ( large numbers ) , the exact effect disappears ;
( 4 ) the relative heat information is presented with accurate motion data , and the low - calorie health food can be selected by the consumer .
