陜西省120份市售玉米及其制品中真菌毒素的污染狀況調(diào)查

【摘要】:目的了解玉米及其制品中的真菌毒素的污染情況。方法 2016年在陜西省10個地市采集120份玉米及其制品,共檢測15種真菌毒素,超高效液相色譜法檢測其中的黃曲霉毒素(aflatoxins,AFs)和玉米赤霉烯酮(zearalenone,ZEN),超高效液相色譜串聯(lián)質(zhì)譜法檢測伏馬菌毒素(fumonisins,FBs)、脫氧雪腐鐮刀菌烯醇及其衍生物(deosynivalenol,DON,3-A-DON,15-A-DON)、雪腐鐮刀菌烯醇(nivalenol,NIV)、T2、HT2毒素、赭曲霉毒素A(ochratoxin A,OTA)。結(jié)果玉米及玉米制品中各種真菌毒素均有檢出,樣品總體檢出率為98.3%。玉米及其制品中ZEN檢出率為49.2%,4.2%的樣品超過國家規(guī)定60μg/kg的限量值。DON、AFB1和OTA的檢出率分別為74.2%、5%和1.7%,均沒有超標(biāo)樣品檢出,其余11種毒素并未規(guī)定限值。檢測的所有真菌毒素中,檢出率最高的毒素為FBs(FB1、FB2和FB3)、DON及其衍生物(DON、3-A-DON和15-A-DON)和玉米赤霉烯酮(ZEN)。其中FBs的檢出率最高,3種伏馬菌毒素的檢出率均在70%以上,FB1的檢出平均值為106μg/kg。DON及兩種衍生物檢出率僅次于FBs。AFT、T2、HT2檢出水平相對較低。OTA是檢出率最低的真菌毒素。93%的玉米樣品受到兩種以上真菌毒素的聯(lián)合污染。結(jié)論陜西省玉米制品中真菌毒素的污染以FB、DON及其衍生物和ZEN為主,且單一樣品受到多種真菌毒素的聯(lián)合污染。
[Abstract]:Objective to investigate the contamination of mycotoxins in maize and its products. Methods 120 samples of corn and its products were collected in 10 cities of Shaanxi Province in 2016. A total of 15 mycotoxins were detected. Ultrahigh performance liquid chromatography was used to detect aflatoxins (AFs), zearalenone (ZENN), fumonisins (FBs1), deoxynivalenoldol (DON3), nivalenolone (NIV) and T2HT2 (T2HT2) by ultrahigh performance liquid chromatography-mass spectrometry (UHPLC-MS), respectively, for the detection of aflatoxins (AFS) and zearalenone (ZENN), and for the detection of fumonisins (FBsN), deoxynivalenoldol (DON) 3-A -DONN (15-DONN), nivalenolnivalenolone (NIVN) and T2HT2 (T2HT2). Ochratoxin A(ochratoxin. Results various mycotoxins were detected in corn and corn products, and the total detection rate was 98.3%. The detectable rate of ZEN in corn and its products was 49.2%. The detection rate of ZEN exceeded the limit value of 60 渭 g/kg specified by the state. The detectable rate of OTA and AFB1 were 74.2% and 1.7%, respectively. None of the samples were detected in excess of the standard, and the other 11 toxins were not limited. Of all the mycotoxins detected, the highest detectable rates were FBsOFB1FB2 and FB3-A-DON and their derivatives DON3-A-DON and 15-A-DON) and ZENN. The detection rate of FBs was the highest. The detection rate of FB1 was more than 70%. The average detection rate of FB1 was 106 渭 g/kg.DON, and the detection rate of two derivatives was second only to the detection level of FBs.AFTTA T2T2T2HT2. OTA was the lowest detection rate of mycotoxin. 93%. The rice samples were contaminated by two or more mycotoxins. Conclusion the contamination of mycotoxins in maize products in Shaanxi Province is mainly caused by FBDON and its derivatives and ZEN, and a single sample is contaminated by a combination of several mycotoxins.
