【摘要】: 明膠是膠原蛋白經(jīng)部分水解和變性而制得,是氨基酸以肽鍵連接起來(lái)的蛋白質(zhì)大分子化合物,含有大量的甘氨酸、脯氨酸、羥基脯氨酸以及天冬氨酸和谷氨酸,分子中含有大量羧基、羥基等活性基團(tuán);殼聚糖是一種陽(yáng)離子聚合物,分子中含有大量氨基、羥基等活性基團(tuán);兩種高聚物間很容易產(chǎn)生氫鍵、離子鍵等作用。 明膠-殼聚糖復(fù)合膜是一種“綠色包裝”,是現(xiàn)代包裝技術(shù)研究的重要方向。全世界每年扔掉和包裝材料有關(guān)的固體廢棄物在50億噸以上,其中30%是塑料廢棄物;可食性膜的研究對(duì)于解決因食品包裝廢棄物而造成的環(huán)境污染問(wèn)題具有重要意義。 對(duì)高分子材料的研究表明,高分子材料制品的結(jié)構(gòu)和性能不僅與高分子材料的化學(xué)結(jié)構(gòu)和分子量等密切相關(guān),處理?xiàng)l件與方法對(duì)其性能也有較大的影響。明膠和殼聚糖均是高分子物質(zhì),明膠-殼聚糖復(fù)合膜的性能和結(jié)構(gòu)受到諸多因素的影響,研究明膠-殼聚糖復(fù)合膜的結(jié)構(gòu)和性能的影響因素對(duì)于該膜的加工和利用具有重要的理論和實(shí)踐意義。 本文系統(tǒng)研究了明膠-殼聚糖復(fù)合膜的成膜特性,通過(guò)單因素試驗(yàn)研究了明膠與殼聚糖的配比、膜液pH值、干燥溫度、加熱干燥時(shí)間、增塑劑種類(lèi)及用量等單因子對(duì)膜性能的影響;對(duì)影響復(fù)合膜性能的主要因子進(jìn)行正交試驗(yàn),確定出最佳的生產(chǎn)工藝參數(shù):明膠與殼聚糖的配比為1.5:1,膜液pH值為4.0,干燥溫度為50℃,加熱干燥時(shí)間為5h,最佳增塑劑為甘油,其用量為0.5g/100mL。
[Abstract]:Gelatin is a protein macromolecular compound composed of amino acids linked by peptide bonds, which is prepared by partial hydrolysis and denaturation of collagen, which contains a large number of glycine, proline, hydroxyproline, aspartic acid and glutamic acid, and contains a large number of carboxy, hydroxyl and other active groups. Chitosan is a cationic polymer, which contains a large number of amino, hydroxyl and other active groups. It is easy to produce hydrogen bond, ion bond and so on between the two kinds of polymer. Gelatin-chitosan composite membrane is a kind of green packaging, which is an important research direction of modern packaging technology. More than 5 billion tons of solid waste related to packaging materials are thrown away every year in the world, of which 30 per cent are plastic waste. The study of edible film is of great significance to solve the problem of environmental pollution caused by food packaging waste. The study of polymer materials shows that the structure and properties of polymer materials are not only closely related to the chemical structure and molecular weight of polymer materials, but also have great influence on the properties of polymer materials. Gelatin and chitosan are both polymer materials. The properties and structure of gelatin-chitosan composite membrane are affected by many factors. It is of great theoretical and practical significance to study the structure and properties of gelatin-chitosan composite membrane for the processing and utilization of the membrane. In this paper, the film forming characteristics of gelatin-chitosan composite membrane were studied systematically. The effects of the ratio of gelatin to chitosan, pH value of membrane solution, drying temperature, heating drying time, type and dosage of plasticizer on the properties of the membrane were studied by single factor test.
