肉粉的營養(yǎng)價(jià)值研究與安全性評價(jià)

【摘要】:本文以采集到的40份國產(chǎn)飼料級肉粉為研究對象,評價(jià)其常規(guī)營養(yǎng)指標(biāo)和質(zhì)量安全指標(biāo),旨在對肉粉的品質(zhì)進(jìn)行全面系統(tǒng)地調(diào)查,為生產(chǎn)上合理使用肉粉提供理論依據(jù),為制定和修訂飼料級肉粉標(biāo)準(zhǔn)提供參考數(shù)據(jù)。本試驗(yàn)采用國標(biāo)法對肉粉常規(guī)營養(yǎng)指標(biāo)進(jìn)行測定,利用ICP-MS法、國標(biāo)法對肉粉中6種常見重金屬(鉻、砷、鉛、釩、鎘、汞)進(jìn)行定量檢測。結(jié)果表明:肉粉的品質(zhì)不穩(wěn)定,常規(guī)營養(yǎng)成分波動(dòng)較大,粗灰分、粗脂肪變異系數(shù)最大;粗蛋白質(zhì)含量為60%~75%,也有少數(shù)樣品低于50%;鈣磷比接近2∶1,同時(shí),肉粉中鈣、磷含量波動(dòng)較大;粗灰分含量為5%~15%,少數(shù)樣品含量為15%~20%。國產(chǎn)肉粉中氨基酸種類較多,各種氨基酸含量分布不均,谷氨酸(Glu)含量最高,接近8%,其次是甘氨酸(Gly),接近7%,蛋氨酸(Met)、組氨酸(His)含量較低。在重金屬方面,鉻、砷、鉛、釩、汞、鎘平均含量未超出限量標(biāo)準(zhǔn)值,但少量樣品出現(xiàn)重金屬超標(biāo)。綜上所述,國產(chǎn)飼料級肉粉營養(yǎng)品質(zhì)不穩(wěn)定,氨基酸組成豐富,但含量差異較大,少量肉粉存在重金屬超標(biāo)現(xiàn)象,肉粉的質(zhì)量安全問題應(yīng)引起重視。
[Abstract]:In this paper, 40 samples of domestic feed grade meat meal were taken as the research object, and their conventional nutrition indexes and quality and safety indexes were evaluated in order to investigate the quality of meat meal comprehensively and systematically, to provide theoretical basis for the rational use of meat meal in production, and to provide reference data for formulating and revising the standard of feed grade meat meal. In this experiment, the conventional nutritional indexes of meat meal were determined by national standard method, and six kinds of common heavy metals (chromium, arsenic, lead, vanadium, cadmium, mercury) in meat meal were quantitatively determined by ICP-MS and national standard method.
