熟化條件對飼用玉米淀粉結構及糊化特性的影響

【摘要】:熟化條件指飼料熟化過程中的高溫、高濕、高壓以及時間等,飼料熟化時能殺滅飼料原料中的細菌和病毒等微生物,降解毒素,使抗營養(yǎng)因子失活,淀粉糊化,蛋白質變性,熟化飼料比普通飼料色、香、味更佳,而且能提高飼料10%~30%利用率。本文就熟化條件對飼用玉米淀粉的顆粒大小、形態(tài)結構、淀粉直/支比、結晶度以及糊化特性的影響進行了綜述,并闡明飼用玉米熟化溫度89~96℃,水分26%,壓力越高效果越好,旨在為飼用玉米熟化條件的選擇提供理論依據和參考。
[Abstract]:The aging condition refers to the high temperature, high humidity, high pressure and time in the process of feed ripening. When the feed is ripe, it can kill the bacteria and viruses in the feed raw material, degrade the toxin, inactivate the anti-nutritive factors, gelatinize the starch, and denaturalize the protein. Cooked feed has better color, flavor and taste than ordinary feed, and can increase feed utilization rate by 10% / 30%. The effects of ripening conditions on grain size, morphology, amylose / branching ratio, crystallinity and gelatinization characteristics of fodder corn starch were reviewed in this paper.
