魯萊黑豬肌內(nèi)脂肪含量、脂肪酸組成及其相關(guān)性狀分析
[Abstract]:The purpose of this study was to study the content of intramuscular fat (Intramuscular fat,IMF), fatty acid composition and related characters of Lulai black pig bred in China, so as to provide basic data for understanding the germplasm characteristics of Lulai black pig. In this study, the carcass backfat thickness, free moisture of longissimus dorsi muscle, intramuscular fat content and fatty acid composition of 487 Lulai black pigs were measured, and the effects of sex and body weight on each index and the correlation between each trait were analyzed. The results showed that Lulai black pig had strong ability of intramuscular fat deposition, the IMF content was 5.25% on average, but the variation coefficient was high (66.04%). Improve group neatness; Except for arachidonic acid, sex had no significant effect on other traits (P0.05). Slaughter weight had significant effect on backfat thickness (P0.01), IMF content (P0.05), and had no significant effect on water and fatty acid composition (P0.05). The correlation between IMF and free water was the highest (correlation coefficient was -0.86), and the regression equation between them had a high square of correction determination coefficient (0.929 4). It can be used as a model for estimating muscle fat content using free water in muscle. In addition, there was a high correlation between the content of IMF and some fatty acids in different parts of backfat. The results of this study have deepened the understanding of the meat quality characteristics of Lulai Black Pig and provided data support for meat quality breeding in the future.
