兩種豬肌內(nèi)脂肪含量測定方法的比較及其與胴體和肉質(zhì)性狀的相關(guān)性分析

【摘要】:[目的]比較分析甲醇-氯仿法(JL法)和索氏抽提法(SS法)提取肌內(nèi)脂肪的效果,研究豬肌內(nèi)脂肪含量與胴體質(zhì)量、背膘厚、嫩度的相關(guān)與回歸關(guān)系。[方法]屠宰測定了279頭四元(皮杜長大)商品豬的胴體質(zhì)量、背膘厚和肉嫩度,并利用索氏抽提法測定肌內(nèi)脂肪含量,對肌內(nèi)脂肪含量與其他性狀指標進行相關(guān)性、回歸及通徑分析。隨機挑選92份肉樣,采用甲醇-氯仿法重新測定肌內(nèi)脂肪含量,并與相應(yīng)樣本的索氏抽提法所得數(shù)據(jù)進行相關(guān)性與差異顯著性分析。[結(jié)果]索氏抽提法測得的肌內(nèi)脂肪濕含量和干含量之間極顯著相關(guān)(r=0.996,P0.01);甲醇-氯仿法和索氏抽提法測得的肌內(nèi)脂肪濕含量之間也極顯著相關(guān)(r=0.909,P0.01),但索氏抽提法測得的肌內(nèi)脂肪含量極顯著高于甲醇-氯仿法(P0.01)。相關(guān)性分析結(jié)果顯示,肌內(nèi)脂肪含量與胴體質(zhì)量、背膘厚及嫩度均存在極顯著相關(guān)性(P0.01),背膘厚與胴體質(zhì)量也存在極顯著相關(guān)性(r=0.629,P0.01),但肌肉嫩度與胴體質(zhì)量、背膘厚無顯著相關(guān)性(P0.05)。回歸分析結(jié)果表明:背膘厚和肉嫩度與肌內(nèi)脂肪含量存在極顯著的回歸關(guān)系(P0.01),而胴體質(zhì)量與肌內(nèi)脂肪含量不存在顯著的回歸關(guān)系(P0.05)。[結(jié)論]索氏抽提法和甲醇-氯仿法均可作為有效測定肌內(nèi)脂肪含量的方法,但在比較品種或個體間肌內(nèi)脂肪含量差異時,需要使用同一種測定方法獲得的數(shù)據(jù);肌內(nèi)脂肪含量與背膘厚、嫩度均存在顯著相關(guān)和回歸關(guān)系。
[Abstract]:[objective] to compare and analyze the effects of methanol-chloroform (JL) and Soxhlet extraction (SS) on the extraction of intramuscular fat, and to study the correlation and regression relationship between the content of intramuscular fat and carcass weight, backfat thickness, tenderness. [methods] carcass weight, backfat thickness and meat tenderness of 279 quaternary (Piedu) commercial pigs were measured by slaughter, and intramuscular fat content was measured by Soxhlet extraction method. Regression and path analysis. Ninety-two meat samples were randomly selected and the content of intramuscular fat was redetermined by methanol-chloroform method, and the correlation and difference were analyzed with the data obtained by Soxhlet extraction method. [results] there was a significant correlation between the wet and dry contents of intramuscular fat measured by Soxhlet extraction method (r = 0.996g, P 0.01), and a significant correlation between the wet content of intramuscular fat measured by methanol-chloroform method and Soxhlet extraction method (r = 0.909, P 0.01), but by Soxhlet extraction method, it was found that there was a significant correlation between the wet content of intramuscular fat and the content of dry fat by Soxhlet extraction method. The content of intramuscular fat was significantly higher than that of methanol-chloroform method (P0.01). The results of correlation analysis showed that there was a significant correlation between intramuscular fat content and carcass weight, backfat thickness and tenderness (P0.01), and between backfat thickness and carcass quality (r = 0.629, P0.01), but there was no significant correlation between muscle tenderness and carcass weight and backfat thickness (P0.05). Regression analysis showed that there was a significant regression relationship between back fat thickness and meat tenderness and intramuscular fat content (P0.01), but there was no significant regression relationship between carcass weight and intramuscular fat content (P0.05). [conclusion] Soxhlet extraction method and methanol-chloroform method can be used as effective methods for the determination of intramuscular fat content. There was a significant correlation and regression relationship between intramuscular fat content and backfat thickness and tenderness.
