【摘要】：麩皮中含有較高的粗纖維及抗?fàn)I養(yǎng)因子,通過選擇合適的微生物組合及發(fā)酵工藝,可改變麩皮纖維的結(jié)構(gòu)、降低抗?fàn)I養(yǎng)因子含量、提高蛋白質(zhì)含量、降解霉菌毒素等。制備具有抗氧化功能、富含可溶性膳食纖維及低聚木糖、有機(jī)酸、益生菌及未知生長因子等的生物保健飼料對(duì)促進(jìn)動(dòng)物健康生長及提高麩皮附加價(jià)值具有重要的意義。本文主要綜述了發(fā)酵麩皮的功能特點(diǎn)及在動(dòng)物飼料中的應(yīng)用,為發(fā)酵麩皮的開發(fā)及應(yīng)用提供參考。
[Abstract]:Wheat bran contains high crude fiber and anti-nutrition factor. By selecting suitable microbial combination and fermentation technology, the structure of wheat bran fiber can be changed, the content of anti-nutrition factor can be reduced, the content of protein can be increased, mycotoxin can be degraded and so on. It is very important to prepare biological healthy diet with antioxidant function, rich in soluble dietary fiber, xylose, organic acid, probiotics and unknown growth factors to promote healthy growth of animals and increase the added value of bran. In this paper, the functional characteristics of fermented bran and its application in animal feed were reviewed, which provided references for the development and application of fermented bran.
