【摘要】：為了探究不同產(chǎn)地寒富蘋果品質(zhì)和貯藏性的差異,分別以沈陽東陵和琿春孟嶺兩個產(chǎn)地的寒富蘋果為實驗材料,探究兩個產(chǎn)地的蘋果果實在貯藏中品質(zhì)及其貯藏性的變化。實驗結(jié)果表明:在果實品質(zhì)方面,相比于琿春產(chǎn)果實,沈陽產(chǎn)果實果肉較致密,果皮較薄,果皮光澤度顯著高于琿春產(chǎn)果實;可溶性固形物含量較高,可滴定酸含量下降較晚,在貯藏后期果實硬度較大,但是貯藏后期果實失重率增加較快;在果實貯藏性方面,兩產(chǎn)地果實總果膠含量變化趨勢相似,琿春產(chǎn)果實纖維素含量比沈陽產(chǎn)果實纖維素含量提前30 d達到峰值;琿春產(chǎn)果實半纖維素含量在貯藏60 d后下降迅速;二者PG酶活性變化趨勢相似,但是琿春產(chǎn)果實β-Gal酶活性在貯藏60 d達到峰值,比沈陽產(chǎn)果實β-Gal酶活性提前30 d達到峰值。綜上所述:相比于琿春產(chǎn)果實,沈陽產(chǎn)寒富蘋果果實品質(zhì)較好,耐貯性較強。
[Abstract]:In order to explore the difference of quality and storage property of cold rich apple from different producing areas, cold rich apple from Shenyang Dongling and Hunchun Mengling were used as experimental materials. The changes of fruit quality and storage property of apple fruits from two producing areas were investigated. The results showed that compared with Hunchun fruits, Shenyang had denser pulp and thinner pericarp than those from Hunchun. The luster of pericarp was significantly higher than that of Hunchun fruit, the content of soluble solids was higher, the content of titratable acid decreased later, the firmness of fruit was larger in the later period of storage, but the weight loss rate of fruit increased rapidly in the later period of storage, and in the aspect of fruit storage, The change trend of total pectin content was similar, the cellulose content of Hunchun fruit reached its peak 30 days earlier than that of Shenyang fruit, and the hemicellulose content of Hunchun fruit decreased rapidly after 60 days of storage. The change trend of PG enzyme activity was similar, but the 尾 -Gal enzyme activity of Hunchun fruit reached its peak after 60 days storage, which was 30 days earlier than that of Shenyang fruit. In conclusion, compared with Hunchun fruit, the 尾 -Gal enzyme activity of Hunchun fruit reached its peak. The fruit quality of cold rich apple in Shenyang is good and the storage ability is strong.
