多糖膜的制備和成膜過(guò)程動(dòng)態(tài)監(jiān)測(cè)及其中試工藝研究

【摘要】:本論文設(shè)計(jì)并制造了一種制膜和動(dòng)態(tài)監(jiān)測(cè)的實(shí)驗(yàn)裝置,利用該裝置,將制備的多糖膜液在膜盤上進(jìn)行了流延,利用近紅外裝置對(duì)膜液在干燥過(guò)程中的近紅外反射光譜,進(jìn)行動(dòng)態(tài)監(jiān)測(cè),并用測(cè)厚儀對(duì)干燥完成后的薄膜進(jìn)行均勻性測(cè)定。設(shè)計(jì)并定制了膜中試設(shè)備,利用該設(shè)備研究了魔芋葡甘聚糖(KGM)膜的配方及中試生產(chǎn)工藝。將中試工藝生產(chǎn)的KGM膜應(yīng)用于方便面調(diào)料的包裝,并進(jìn)行了儲(chǔ)藏試驗(yàn)。論文主要得到了以下結(jié)果:(1)將普魯蘭溶液在膜盤上進(jìn)行流延鋪展。在液膜干燥初始階段(0 h),液膜里圈、中圈和外圈上各點(diǎn)的近紅外反射圖譜處于重疊狀態(tài),與普魯蘭膜液較為均一的狀態(tài)相符;在干燥2.5 h時(shí),普魯蘭膜液的近紅外反射率,由外圈至里圈逐漸減小,與膜液的干燥過(guò)程是由外向里的現(xiàn)象相符;在干燥成膜結(jié)束時(shí)(5 h),外圈的近紅外反射率略高于中圈,中圈的近紅外反射率略高于里圈,這可能是因?yàn)樵诟稍镞^(guò)程中,膜液向中心有輕微的收縮,因而中心的薄膜略高于邊緣的薄膜;對(duì)動(dòng)態(tài)成膜儀制備的薄膜進(jìn)行了均勻性測(cè)定,各點(diǎn)厚度無(wú)顯著性差異。(2)KGM膜液的最佳配方為:KGM與水的質(zhì)量體積比為1.25%,甘油添加量為KGM質(zhì)量的25%。KGM膜中試生產(chǎn)最優(yōu)工藝條件為:流延厚度為2 mm,干燥溫度為60℃,抽風(fēng)速度為25 HZ。利用最優(yōu)的配方和中試生產(chǎn)工藝,生產(chǎn)獲得均一平整的KGM膜,其拉伸強(qiáng)度為84.3 MPa,斷裂伸長(zhǎng)率為63.9%,透明度T值為0.014。(3)用KGM膜包裝的方便面調(diào)料(調(diào)味粉、脫水蔬菜、醬),在儲(chǔ)藏6個(gè)月后,質(zhì)量、外觀無(wú)變化,與相同條件下貯存,未經(jīng)替換的調(diào)料包相比,兩種包裝的微生物總數(shù)無(wú)顯著性差異,粉包的菌落總數(shù)為120 cfu/g,蔬菜包的菌落總數(shù)均為450 cfu/g,醬包菌落總數(shù)均為350 cfu/g,均符合國(guó)家食品安全標(biāo)準(zhǔn)GB17400-2003中菌落總數(shù)小于1000cfu/g的要求。
[Abstract]:In this paper, an experimental device for film making and dynamic monitoring is designed and manufactured. By using this device, the prepared polysaccharide membrane liquid is rolled on the membrane disk, and the near-infrared reflectance spectrum of the film solution during drying process is obtained by using the near infrared device. Dynamic monitoring was carried out, and the uniformity of the film after drying was measured by thickness measuring instrument. The pilot-scale equipment of konjac glucomannan (KGM) membrane was designed and customized. The formulation and production process of konjac glucomannan (KGM) membrane were studied. The KGM film produced by pilot-scale process was applied to the packaging of instant noodle seasoning, and the storage test was carried out. The main results are as follows: (1) Pluran solution was spread on the membrane disk. At the initial stage of drying (0 h), liquid film inner circle, middle circle and outer circle), the near infrared reflectance of the liquid film was overlapped, which was consistent with the uniform state of the liquid film, and the near infrared reflectance of the liquid was observed when the liquid was dried for 2. 5 h. The near infrared reflectance of the outer loop was slightly higher than that of the middle circle, and the near infrared reflectivity of the middle circle was slightly higher than that of the inner ring at the end of the drying film formation. This may be due to the slight contraction of the liquid toward the center during drying, so that the film in the center is slightly higher than the film at the edge, and the uniformity of the film prepared by the dynamic film forming instrument has been measured.
