明清時期太湖地區(qū)茶葉生產(chǎn)研究

【摘要】:我國是茶的故鄉(xiāng),茶葉生產(chǎn)歷史悠久。太湖地區(qū)是我國古代著名的茶區(qū)之一,茶葉生產(chǎn)歷史悠久。太湖地區(qū)的茶葉生產(chǎn)在明清時期得到了空前的發(fā)展與進(jìn)步,主要體現(xiàn)在這一時期有關(guān)太湖地區(qū)的茶葉專著或是太湖地區(qū)人撰寫的茶書之中。深入挖掘這些茶書的科學(xué)內(nèi)涵和學(xué)術(shù)價值,有利于為現(xiàn)代茶葉生產(chǎn)的發(fā)展提供理論基礎(chǔ)和現(xiàn)實(shí)依據(jù)。 太湖地區(qū)是較早改制散茶的地區(qū)之一,明清時期炒青技術(shù)取代了團(tuán)茶制造技術(shù)的主流地位,明萬歷后太湖地區(qū)茶人撰寫的茶書中記述制茶的過程主要是介紹炒青的生產(chǎn)流程。在唐宋發(fā)展的基礎(chǔ)上,明清太湖地區(qū)的茶葉產(chǎn)地有了進(jìn)一步的擴(kuò)大,并形成了六大主要茶區(qū)。茶葉名品日益繁多,名茶生產(chǎn)成為太湖地區(qū)茶葉生產(chǎn)發(fā)展的重要特征之一,同時也是發(fā)展太湖地區(qū)茶業(yè)和促進(jìn)當(dāng)?shù)剞r(nóng)業(yè)經(jīng)濟(jì)發(fā)展的一大優(yōu)勢。 太湖地區(qū)的茶葉“專以采造勝”,精于加工,以質(zhì)取勝是太湖地區(qū)茶葉一直名冠全國并持久不衰的主要原因,同時也是太湖地區(qū)茶葉生產(chǎn)的重要特征之一。明清太湖地區(qū)的茶書或太湖地區(qū)人撰寫的茶書是研究該地區(qū)茶葉生產(chǎn)技術(shù)的主要依據(jù),該地區(qū)茶葉生產(chǎn)技術(shù)的進(jìn)步是全方位的,包括茶樹栽培技術(shù)、茶園管理、茶葉采摘技術(shù)以及制茶技術(shù),特別是制茶技術(shù)的變革,使炒青技術(shù)自明代起成為制茶技術(shù)的主流,具有劃時代意義,而且,制茶工藝和原則至今仍被各種高檔綠茶所沿用和遵循。明清時期太湖地區(qū)茶葉生產(chǎn)技術(shù)達(dá)到了全面成熟、定型的階段,處于全國領(lǐng)先地位,是其他地區(qū)學(xué)習(xí)和借鑒的典范。 茶葉名品在明清時期層出不窮有多方面因素,太湖地區(qū)除了本身具備適宜茶樹生長的自然條件外,優(yōu)越的社會文化條件、悠久深厚的茶葉生產(chǎn)歷史積淀都是促成茶葉生產(chǎn)發(fā)展的重要因素。明清太湖地區(qū)社會商品經(jīng)濟(jì)得到進(jìn)一步發(fā)展,茶葉消費(fèi)增加對茶葉生產(chǎn)的發(fā)展起到了極大的促進(jìn)作用,同時,太湖地區(qū)自1840年鴉片戰(zhàn)爭上海開埠后,茶葉貿(mào)易的擴(kuò)大也推動了茶葉生產(chǎn)的進(jìn)一步發(fā)展。 茶葉作為太湖地區(qū)古老的經(jīng)濟(jì)作物之一,對農(nóng)業(yè)經(jīng)濟(jì)的發(fā)展具有巨大的促進(jìn)作用,一方面加速了農(nóng)業(yè)經(jīng)濟(jì)結(jié)構(gòu)的改變,另一方面,促進(jìn)了茶文化的興盛。同時,明清太湖地區(qū)的茶葉生產(chǎn)對發(fā)展當(dāng)今太湖地區(qū)茶葉生產(chǎn)具有重要的參考價值和借鑒意義。太湖地區(qū)應(yīng)繼承和弘揚(yáng)名茶生產(chǎn)的優(yōu)勢,大力發(fā)展太湖地區(qū)名優(yōu)茶,加強(qiáng)和重視名優(yōu)茶的保護(hù),重視機(jī)械制茶,提高茶葉生產(chǎn)率。同時,適度開發(fā)太湖地區(qū)茶文化旅游,有利于弘揚(yáng)茶文化,促進(jìn)當(dāng)?shù)芈糜螛I(yè)、茶業(yè)和地方經(jīng)濟(jì)的發(fā)展。
[Abstract]:Our country is the hometown of tea, tea production has a long history. Taihu area is one of the famous tea areas in ancient China, tea production has a long history. Tea production in Taihu Lake area was developed and improved in Ming and Qing dynasties, mainly reflected in tea monographs about Taihu Lake area or tea books written by people in Taihu Lake area. Digging into the scientific connotation and academic value of these tea books is helpful to provide theoretical and practical basis for the development of modern tea production. Taihu area was one of the early areas to reform the tea production. In the Ming and Qing dynasties, the firing technology replaced the mainstream position of the tea manufacture technology. The tea production process was mainly described in the tea book written by the tea people in the Taihu area after the Ming Dynasty and then introduced the production process of the stir-fried green tea. On the basis of the development of Tang and Song dynasties, the tea producing areas of Taihu Lake in Ming and Qing dynasties were further expanded, and six main tea areas were formed. The production of famous tea has become one of the important characteristics of tea production and development in Taihu Lake area, and it is also a great advantage in developing tea industry and promoting the development of local agricultural economy in Taihu Lake area. The tea in Taihu Lake area is the main reason that tea is famous all over the country and lasts for a long time, and it is also one of the important characteristics of tea production in Taihu Lake area. Tea books in Taihu Lake area of Ming and Qing dynasties or tea books written by people in Taihu Lake area are the main basis for studying tea production technology in this area. The progress of tea production technology in this area is all-round, including tea tree cultivation techniques and tea garden management. The change of tea picking technology and tea making technology, especially tea making technology, makes the technology of stir-frying green become the mainstream of tea making technology since Ming Dynasty, which has epoch-making significance, moreover, Tea making techniques and principles are still used and followed by all kinds of high-grade green tea. During the Ming and Qing dynasties, tea production technology in Taihu Lake area reached the stage of full maturity and formalization, and was in the leading position in the whole country. It is a model for other regions to learn and learn from. There were many factors in the emergence of famous tea products in the Ming and Qing dynasties. In addition to the natural conditions suitable for the growth of tea trees, the Taihu Lake region had superior social and cultural conditions. The long and deep history of tea production is an important factor to promote the development of tea production. The social commodity economy of Taihu Lake area in Ming and Qing dynasties was further developed, and the increase of tea consumption played a great role in promoting the development of tea production. At the same time, since the opening of Shanghai in 1840 in the Opium War, The expansion of tea trade also promoted the further development of tea production. Tea, as one of the ancient cash crops in Taihu Lake area, plays a great role in promoting the development of agricultural economy. On the one hand, it accelerates the change of agricultural economic structure, on the other hand, it promotes the prosperity of tea culture. At the same time, the tea production in Taihu Lake area of Ming and Qing dynasties has important reference value and significance for the development of tea production in Taihu Lake area. Taihu area should inherit and carry forward the advantages of famous tea production, vigorously develop famous and excellent tea in Taihu area, strengthen and attach importance to the protection of famous and excellent tea, attach importance to mechanical tea making, and improve tea productivity. At the same time, the moderate development of tea culture tourism in Taihu Lake area is conducive to carrying forward tea culture and promoting the development of local tourism, tea industry and local economy.
