山核桃質(zhì)量控制中的統(tǒng)計(jì)方法應(yīng)用研究

【摘要】:近幾年,市場上具有高營養(yǎng)醫(yī)療保健價(jià)值的山核桃頻頻出現(xiàn)質(zhì)量問題。而傳統(tǒng)的質(zhì)量控制方法并不能滿足山核桃“從山頭到餐桌”的全程質(zhì)量控制。通過比較研究發(fā)現(xiàn),當(dāng)前質(zhì)量控制方法均偏重生產(chǎn)加工環(huán)節(jié),側(cè)重于事后預(yù)防而非事前控制,已有控制方法落后,抽樣檢驗(yàn)方法單一、表現(xiàn)形式單一,多以合格率的形式反映質(zhì)量現(xiàn)狀。 21世紀(jì)是大數(shù)據(jù)時(shí)代,一切用數(shù)據(jù)說話。面對目前山核桃質(zhì)量控制數(shù)據(jù)的缺乏,本文旨在獲取統(tǒng)計(jì)數(shù)據(jù),應(yīng)用統(tǒng)計(jì)數(shù)據(jù)來進(jìn)行山核桃質(zhì)量管控。本文首先采用實(shí)地調(diào)查法與實(shí)證分析法明確山核桃的生產(chǎn)鏈條、生產(chǎn)流程及質(zhì)量影響因素。繼而采用比較研究法,對當(dāng)前食品質(zhì)量控制措施,尤其是統(tǒng)計(jì)方法,進(jìn)行了比較分析。在此基礎(chǔ)上,探索了相關(guān)質(zhì)量控制體系、系統(tǒng)、方法在山核桃質(zhì)量控制中的應(yīng)用,并基于此篩選、設(shè)計(jì)合適的統(tǒng)計(jì)方法,首先構(gòu)建山核桃質(zhì)量控制指標(biāo)體系,覆蓋山核桃質(zhì)量控制全程,并將全程分為產(chǎn)前、產(chǎn)中、產(chǎn)后三個(gè)環(huán)節(jié),分環(huán)節(jié)分別探索了污染指數(shù)法、質(zhì)量控制圖、工序能力指數(shù)、變異度、工序變化假設(shè)檢驗(yàn)、分級、多指標(biāo)綜合評判等統(tǒng)計(jì)方法在山核桃質(zhì)量控制中的應(yīng)用,設(shè)計(jì)了相關(guān)數(shù)據(jù)獲取表格,詳細(xì)說明了在山核桃整個(gè)生產(chǎn)價(jià)值鏈條中的應(yīng)用,輔助于全程產(chǎn)、供、銷一體的抽樣檢驗(yàn)方案,最終形成基于統(tǒng)計(jì)方法的山核桃全程質(zhì)量控制框架體系?梢杂行Й@取相關(guān)質(zhì)量監(jiān)控?cái)?shù)據(jù),并高效利用數(shù)據(jù)。 本文對質(zhì)量控制所設(shè)計(jì)的統(tǒng)計(jì)方法覆蓋了山核桃“從山頭到餐桌”全流程,做到了以事實(shí)和數(shù)據(jù)說話。切實(shí)保證山核桃質(zhì)量安全,促進(jìn)山核桃產(chǎn)業(yè)發(fā)展及森林食品行業(yè)壯大。
[Abstract]:In recent years, pecan with high nutritional and health care value appears quality problems frequently in the market, but the traditional quality control methods can not meet the whole quality control of Pecan "from the top of the hill to the dining table". Control, the existing control methods are backward, sampling inspection methods are single, the manifestation is single, mostly in the form of qualified rate to reflect the quality status quo.
The 21st century is the era of big data. Faced with the lack of quality control data of hickory, this paper aims to obtain statistical data and use statistical data to control the quality of hickory. On this basis, the application of relevant quality control systems, systems and methods in pecan quality control was explored. Based on this screening, suitable statistical methods were designed. Firstly, the quality control index system of Pecan was constructed. The whole process of quality control of Carya cathayensis was divided into three stages: pre-production, mid-production and post-production. The application of pollution index method, quality control chart, process capability index, variability, hypothesis test of process change, classification and multi-index comprehensive evaluation in quality control of Carya cathayensis was explored in different stages. The application of the form in the whole production value chain of hickory is explained in detail, which is helpful to the sampling inspection scheme of the whole production, supply and marketing, and finally forms the whole quality control framework system of hickory based on statistical method.
The statistical method designed by the quality control institute covers the whole process of hickory "from the top of the hill to the dining table". It can guarantee the quality and safety of hickory and promote the development of hickory industry and the growth of forest food industry.
