人文地理學(xué)視角下的國外飲食文化研究進(jìn)展

Abstract:Withthetrendof'Culturalturn'andinter-disciplinary,humangeographershaveturnedtheirinter-estsagaintothematerialculture.Therefore,theseyears,astheimportantformofmaterialthings,foodbe-comesoneofthemostsignificantobjectsinhumangeographyresearch,especiallyinthewesternworld.

However,Thesensesofsmell,touch,tasteandhearinghavebeenneglectedasaconsequenceoftheempha-sison'waysofseeing',sothatthereareonlythreereviewsonthetopicaboutthegeographiesoffood,andjustfewgeographersarestudyingfoodbothabroadanddomestic.So,inthispaper,wewillfocusonthethemesandtendenciesintheresearchaboutthegeographiesoffoodinthewesterndiscourse,inordertopro-videsomenewdirectionstotheresearchongeographiesoffoodinChina.Theresultsshowsthat,therearefourmainthemesinthegeographicalfoodstudies,thoseare:(1)thesymbolicmeaningsoffood;(2)thefoodeconomics;(3)theculturalpoliticsbehindfood;and(4)theresearchlinksfoodandpeople'sidentities.Andthethreetendenciesofwesterngeographicfoodstudiesare:(1)emphasizingtheglobalizationandinterna-tionalmobility,andtheirimpactsonfoodmeanings,foodeconomics,foodpoliciesandpeople'sidentitiesfromeatingandpreparingfood;(2)focusingonthecomplicatedmeaningsoffoodandtheconnectionbe-tweenpeople,food,physicalsettingsandthesociety.Thatistosay,thegeographersregardfoodasakindofmaterialculture,andexplorethesocialandculturalmeaningsoffood;(3)turningtoexplorethespatialityofeatingandfoodculturesfromdiscussingtheregionaldiversitiesoffoodmeanings.Keywords:foodculture;symbolicmeaning;identity;foodeconomics;culturalpolitics

提要:隨著人文地理學(xué)的文化轉(zhuǎn)向，以及跨學(xué)社會(huì)之間關(guān)系的探討；（3）從探討飲食和飲食文化本身的地理學(xué)研究，轉(zhuǎn)向?qū)︼嬍晨臻g問題的探討。在此基礎(chǔ)上，從人地關(guān)系、跨地方以及文化政治三個(gè)方面對人文地理學(xué)視角下國內(nèi)飲食文化研究提出了展望。

科的研究趨勢，有關(guān)飲食、飲食文化體系和飲食活動(dòng)的研究成為了地理學(xué)的研究對象之一。人文地理學(xué)視角下國外飲食文化研究主要集中在飲食的象征意義、飲食的文化經(jīng)濟(jì)、飲食的文化政治以及飲食與認(rèn)同的相關(guān)研究四個(gè)方面。而國外的飲食文化研究趨勢主要表現(xiàn)在（1）強(qiáng)調(diào)飲食全球化和跨國現(xiàn)象及其帶來的影響；（2）關(guān)注飲食的意義以及人、飲食、物質(zhì)環(huán)境和
