【摘要】：以一級(jí)大豆油、乙醇及乙酸為原料,在脂肪酶Novozym 435催化作用下,先用一級(jí)大豆油與乙醇進(jìn)行醇解工藝制得Sn-2-單甘脂,再將Sn-2-單甘脂與乙酸進(jìn)行酶促酯化反應(yīng)得到SLS型結(jié)構(gòu)脂質(zhì),其優(yōu)化的第2次酶解工藝條件是:反應(yīng)時(shí)間11.6 h,加酶量8.0%,底物物質(zhì)的量比5.5∶1,反應(yīng)溫度44.0℃。在此條件下乙酸插入率為64.5%,經(jīng)分子蒸餾后獲得純度為94.3%,熱值21.12 k J/g的SLS型結(jié)構(gòu)脂質(zhì),與普通大豆油相比,熱值降低了45%。
[Abstract]:Sn-2- monoglyceride was prepared by alcoholysis of first-grade soybean oil, ethanol and acetic acid with lipase Novozym 435 as catalyst. Then esterification of Sn-2- monoglyceride with acetic acid was carried out to obtain SLS structural lipid.
