二次酶解法制備低能SLS型結構脂質工藝研究

【摘要】:以一級大豆油、乙醇及乙酸為原料,在脂肪酶Novozym 435催化作用下,先用一級大豆油與乙醇進行醇解工藝制得Sn-2-單甘脂,再將Sn-2-單甘脂與乙酸進行酶促酯化反應得到SLS型結構脂質,其優(yōu)化的第2次酶解工藝條件是:反應時間11.6 h,加酶量8.0%,底物物質的量比5.5∶1,反應溫度44.0℃。在此條件下乙酸插入率為64.5%,經(jīng)分子蒸餾后獲得純度為94.3%,熱值21.12 k J/g的SLS型結構脂質,與普通大豆油相比,熱值降低了45%。
[Abstract]:Sn-2- monoglyceride was prepared by alcoholysis of first-grade soybean oil, ethanol and acetic acid with lipase Novozym 435 as catalyst. Then esterification of Sn-2- monoglyceride with acetic acid was carried out to obtain SLS structural lipid. The optimum conditions for the second enzymatic hydrolysis were as follows: reaction time 11.6 h, enzyme amount 8.0, and the ratio of substrate to substrate 5.5: 1.
