噴霧干燥法制備乳脂微膠囊及其特性的研究

【摘要】:運(yùn)用響應(yīng)面分析法,優(yōu)化乳脂微膠囊噴霧干燥法制備工藝參數(shù),并對(duì)其基本理化指標(biāo)、形態(tài)特征及其抗潮性、熱穩(wěn)定性、氧化穩(wěn)定性和貯藏穩(wěn)定性進(jìn)行測(cè)定分析。結(jié)果表明:噴霧干燥法制備微膠囊的最佳工藝參數(shù)為:進(jìn)風(fēng)溫度178℃、出風(fēng)溫度80℃、均質(zhì)壓力43 MPa,其微膠囊乳脂包埋率為93.14%、含水量3.12%、灰分2.07%、蛋白質(zhì)18.56%、溶解度67.01 g/100 g、密度0.45 g/cm3,粒徑分布在4~90μm。產(chǎn)品加工應(yīng)用適宜溫度在220℃以下,具有抗氧化穩(wěn)定性好,易吸水、不耐高溫的特性。
[Abstract]:By using response surface analysis (RSM), the preparation parameters of emulsion microcapsules by spray drying method were optimized, and the basic physicochemical indexes, morphological characteristics, moisture resistance and thermal stability were analyzed. The oxidation stability and storage stability were determined and analyzed.
