【摘要】：我國(guó)谷物釀酒歷史悠久,新石器時(shí)代原始農(nóng)業(yè)出現(xiàn)以后,原始先民就已經(jīng)認(rèn)知并掌握了谷物釀酒技術(shù)。距今8000年的查海遺址是我國(guó)北方新石器時(shí)代重要的一處文化遺存,考古發(fā)掘表明當(dāng)時(shí)已經(jīng)進(jìn)入到原始農(nóng)業(yè)經(jīng)濟(jì)時(shí)代,隨著查海社會(huì)的發(fā)展,谷物糧食的生產(chǎn)和陶器的使用,查海人已經(jīng)掌握了谷物釀酒技術(shù)開始谷物釀酒。查海遺址的窖穴遺跡、家豬的飼養(yǎng)、專用酒器的使用進(jìn)一步證明查海谷物釀酒的出現(xiàn),這是查海先民在長(zhǎng)期農(nóng)業(yè)勞動(dòng)過程中觀察和實(shí)踐的經(jīng)驗(yàn)總結(jié),是集體智慧的結(jié)晶,查海遺址也成為我國(guó)谷物釀酒的重要發(fā)源地之一。
[Abstract]:China has a long history of cereals wine making, after the appearance of Neolithic primitive agriculture. The original ancestors had already known and mastered the grain brewing technology. The Chahai site in 8000 was an important cultural relic of the Neolithic Age in the north of China. Archaeological excavations showed that at that time had entered the age of primitive agricultural economy, with the development of Chahai society, grain production and the use of pottery. The Chahai people have mastered grain brewing techniques to start making cereals. The cellar remains of the Chahai site, the raising of domestic pigs, and the use of special wine vessels further prove the emergence of Chahai cereals. This is the experience and summary of the observation and practice of Chahai ancestors in the long-term agricultural labor process and the crystallization of collective wisdom. Chahai site has also become one of the important birthplaces of grain wine making in China.
