BDE-209在羅非魚體內(nèi)的代謝及其在烹飪過程中的變化

【摘要】:通過給羅非魚喂食含十溴聯(lián)苯醚(BDE-209)的飼料,研究了BDE-209在魚體內(nèi)的代謝產(chǎn)物與生物可利用性,同時研究了羅非魚肉中多溴聯(lián)苯醚(PBDEs)在烹飪過程中的變化。結(jié)果表明:BDE-209在魚體中主要代謝產(chǎn)物有BDE-208、-207、-206、-154及六溴、七溴與八溴聯(lián)苯醚,其中代謝產(chǎn)物貢獻魚肌肉PBDEs為(97±0.8)%,說明BDE-209主要以其代謝產(chǎn)物形式被魚體富集,且BDE-209在羅非魚體內(nèi)的生物可利用性為(3.7±0.9)%。水煮和蒸的烹飪方式對羅非魚體內(nèi)PBDEs的攝食暴露風險的影響不顯著,但高溫油炸過程中BDE-209會生成降解產(chǎn)物,包括BDE-153、-183、-196、-197、-203、-206、-207、-208,將增加其的攝食暴露風險。因此,有機污染物的人體膳食暴露風險評估需考慮其在烹飪過程中的變化。
[Abstract]:The metabolites and bioavailability of BDE-209 in fish were studied by feeding tilapia with decabromodiphenyl ether (BDE-209), and the changes of PBDEs in tilapia meat during cooking were studied.The results showed that the main metabolites of BDE-209 in the fish were BDE-208C-207N-206C1-154 and hexabromo-154, heptabromodium and octabromodiphenyl ether, in which the metabolite PBDEs of fish muscle was 97 鹵0.8, indicating that BDE-209 was mainly enriched by fish in the form of its metabolites.The bioavailability of BDE-209 in tilapia was 3. 7 鹵0. 9.Therefore, dietary exposure risk assessment of organic pollutants should take into account their changes during cooking.
