【摘要】:餐飲油煙污染已成為大氣污染不能忽略的重要組成部分,由于餐飲油煙擾民導(dǎo)致的投訴事件也是屢見(jiàn)不鮮。食品烹調(diào)過(guò)程中產(chǎn)生的餐飲油煙會(huì)對(duì)烹調(diào)者的身體產(chǎn)生一定的危害,其危害主要體現(xiàn)在餐飲油煙會(huì)對(duì)呼吸系統(tǒng)造成一定的影響并可能造成一些呼吸系統(tǒng)病變。另外餐飲油煙的過(guò)度排放還會(huì)造成嚴(yán)重的城市大氣污染事件,例如光化學(xué)煙霧及霧霾,F(xiàn)階段蘭州市內(nèi)的餐飲企業(yè)油煙排放超標(biāo)率達(dá)到了80%以上,多數(shù)餐飲企業(yè)由于環(huán)保意識(shí)薄弱以及經(jīng)濟(jì)條件有限等多方面的因素,并沒(méi)有安裝并使用有效的餐飲油煙處理設(shè)備。本次研究主要結(jié)合了調(diào)查、設(shè)計(jì)、實(shí)驗(yàn)三部分,力求解決餐飲油煙過(guò)量排放這一問(wèn)題。監(jiān)測(cè)試驗(yàn)選取了油煙濃度及多環(huán)芳烴類(lèi)物質(zhì)兩項(xiàng)檢測(cè)指標(biāo),監(jiān)測(cè)點(diǎn)隨機(jī)選取了蘭州市內(nèi)12家餐飲企業(yè),使用了煙道內(nèi)油煙平行采樣儀監(jiān)測(cè)了油煙及多環(huán)芳烴類(lèi)物質(zhì)的產(chǎn)生濃度以及排放濃度。最終結(jié)合實(shí)驗(yàn)具體數(shù)據(jù),同時(shí)總結(jié)文獻(xiàn)中已有的油煙凈化方法,設(shè)計(jì)一種適用于蘭州市大中型餐飲企業(yè)的油煙凈化裝置,實(shí)現(xiàn)油煙的達(dá)標(biāo)排放。新式油煙凈化裝置使用了三段式的油煙凈化思路,即前段優(yōu)化集氣罩過(guò)濾網(wǎng),對(duì)油煙進(jìn)行初步的凈化;中段使用碰撞式油煙凈化裝置,對(duì)油煙進(jìn)行有效的處理;末端使用吸附材料,對(duì)油煙進(jìn)行最后一步凈化,使油煙排放濃度達(dá)到最低。通過(guò)實(shí)際監(jiān)測(cè)實(shí)驗(yàn)證實(shí)該種新型油煙凈化裝置的處理效率及處理后排放煙氣的濃度都達(dá)到國(guó)家相關(guān)排放標(biāo)準(zhǔn),通過(guò)凈化處理系統(tǒng)處理后煙氣濃度降低到1.4mg/m3,預(yù)計(jì)處理效率達(dá)可到80%以上。設(shè)備投資以及運(yùn)行費(fèi)用適中,設(shè)備維護(hù)以及操作十分簡(jiǎn)便?傮w來(lái)說(shuō),本次設(shè)計(jì)的新型油煙凈化系統(tǒng)具有一定的實(shí)用價(jià)值并值得推廣
[Abstract]:Cooking oil fume pollution has become an important part of air pollution. The cooking oil fume produced in the course of food cooking will cause certain harm to the body of the cook. The harm is mainly reflected in the influence of the cooking oil fume on the respiratory system and some respiratory system diseases. In addition, excessive emissions of cooking oil fumes can also cause serious urban air pollution events, such as photochemical smog and haze. At the present stage, the rate of oil fume emission exceeds 80% in the catering enterprises in Lanzhou. Because of the weak consciousness of environmental protection and limited economic conditions, most catering enterprises have not installed and used effective cooking fume treatment equipment. This study mainly combines investigation, design and experiment to solve the problem of excessive emission of fume. The oil fume concentration and polycyclic aromatic hydrocarbons (PAHs) were selected in the monitoring test, and 12 restaurants in Lanzhou were randomly selected at the monitoring point. The generation and emission concentrations of oil fumes and polycyclic aromatic hydrocarbons (PAHs) were monitored by using a smoke parallel sampler in flue. Finally, combining with the experimental data and summarizing the existing methods of oil fume purification in literature, a kind of oil fume purification device suitable for large and medium-sized catering enterprises in Lanzhou was designed to achieve the standard of soot emission. The new type of oil fume purifying device uses three-stage oil fume purification thought, that is, the front section optimizes the gas collecting cover filter net to carry on the preliminary purification to the oil fume, the middle section uses the collision type oil fume purification device, carries on the effective treatment to the oil fume; The final step of purifying the oil fume was carried out by using the adsorption material at the end, so that the exhaust concentration of the oil fume reached the lowest. Through the actual monitoring experiment, it is proved that the treatment efficiency and the concentration of flue gas after treatment of this new type of oil fume purification device are up to the relevant national emission standards. The concentration of flue gas was reduced to 1.4 mg / m ~ (3) by purification treatment system, and the treatment efficiency was estimated to be more than 80%. The equipment investment and operation cost is moderate, the equipment maintenance and the operation are very simple. Generally speaking, the new type of oil fume purification system designed this time has certain practical value and is worth popularizing.
