【摘要】:隨著生活水平的提升,人們對果蔬類冷鏈產(chǎn)品的需求量逐漸增大,對其品質(zhì)的要求日益提高。果蔬類生鮮產(chǎn)品具有易損易腐性,對流通加工的時間和效率要求較高。因此,冷鏈企業(yè)在加工處理果蔬過程中必須快速、及時,才能最大程度地保障果蔬產(chǎn)品的質(zhì)量。我國冷鏈企業(yè)普遍存在著產(chǎn)品流通率低、腐損率高、成本居高不下的問題。作為企業(yè)最大盈利的直接創(chuàng)造地,生產(chǎn)現(xiàn)場既是生產(chǎn)要素、綜合信息的場所,也是各種亟待解決的現(xiàn)場問題產(chǎn)生的地方。生產(chǎn)現(xiàn)場管理水平可體現(xiàn)企業(yè)經(jīng)營狀況的優(yōu)劣。生產(chǎn)現(xiàn)場的管理狀況直接影響著果蔬的品質(zhì),進(jìn)而關(guān)系到企業(yè)的成本利潤和客戶的滿意度。通過對冷鏈企業(yè)進(jìn)行現(xiàn)場改善,對作業(yè)方法、物流布局、倉儲形式等進(jìn)行優(yōu)化,合理配置各類生產(chǎn)因素,可以達(dá)到加快流通率、提高產(chǎn)品質(zhì)量、降低生產(chǎn)成本的目的。本文以某果蔬冷鏈企業(yè)為背景,深入研究配送中心的產(chǎn)品加工流程、物流路線、倉儲及現(xiàn)場環(huán)境等。首先構(gòu)建冷鏈生產(chǎn)現(xiàn)場評價體系,對配送中心的初始狀況進(jìn)行綜合評價,得到主要的問題模塊。其次,針對作業(yè)流程、倉儲布局、現(xiàn)場5S進(jìn)行分析及優(yōu)化。通過Anylogic仿真得到作業(yè)流程的基本情況,線平衡及模特分析法查找瓶頸工序;設(shè)計削皮機(jī)消除瓶頸工序,提高作業(yè)效率和生產(chǎn)質(zhì)量產(chǎn)量。通過線路圖分析產(chǎn)品流通路徑,運用設(shè)施布局規(guī)劃法重新設(shè)計路線,使路徑縮短,物流量減少,物流通暢便捷。圍繞倉儲布局問題,通過產(chǎn)品擺放形式的調(diào)整減少蜂窩損失,最大程度保證產(chǎn)品質(zhì)量,提高倉庫利用率。推行5S方案優(yōu)化現(xiàn)場的人員、設(shè)施設(shè)備、環(huán)境等現(xiàn)狀。最后,對改善后的生產(chǎn)現(xiàn)場進(jìn)行成本核算及效果總結(jié),實施二次系統(tǒng)評價。評價結(jié)果顯示,通過有效的方法改善后,生產(chǎn)現(xiàn)場整體作業(yè)效率得到了有效的提升,產(chǎn)品流通率加快了,環(huán)境更加整潔,人員作業(yè)更為標(biāo)準(zhǔn)規(guī)范。
[Abstract]:With the improvement of living standard, the demand for fruit and vegetable cold chain products is increasing gradually, and the demand for its quality is increasing day by day. Fresh fruit and vegetable products are fragile and perishable, and require high processing time and efficiency. Therefore, in the process of processing fruits and vegetables, cold-chain enterprises must be quick and timely, in order to maximize the quality of fruit and vegetable products. Cold chain enterprises in our country have the problems of low circulation rate, high decay rate and high cost. As the direct creation place of the biggest profit of the enterprise, the production site is not only the place of production factor, comprehensive information, but also the place where all kinds of field problems need to be solved urgently. Production site management level can reflect the advantages and disadvantages of enterprise management. The production site management directly affects the quality of fruits and vegetables, and then relates to the cost and profit of enterprises and customer satisfaction. By improving the cold chain enterprises on the spot, optimizing the operation method, logistics layout and storage form, and allocating all kinds of production factors reasonably, the purpose of speeding up the circulation rate, improving the product quality and reducing the production cost can be achieved. In this paper, a fruit and vegetable cold chain enterprise as the background, in-depth study of the distribution center of the product processing process, logistics routes, warehousing and on-site environment. First, the cold chain production site evaluation system is constructed, and the initial status of distribution center is evaluated synthetically, and the main problem modules are obtained. Secondly, the operation flow, storage layout, site 5 S analysis and optimization. The basic conditions of the operation flow were obtained by Anylogic simulation, line balance and model analysis were used to find the bottleneck procedure, and the peeler was designed to eliminate the bottleneck procedure and to improve the efficiency and production quality. The route of product circulation is analyzed by the route diagram, and the route is redesigned by the method of facility layout planning, so that the route is shortened, the flow of goods is reduced, and the logistics is smooth and convenient. According to the problem of storage layout, the honeycomb loss is reduced through the adjustment of product layout, and the product quality is guaranteed to the greatest extent, and the warehouse utilization ratio is improved. Implement 5 S program to optimize site personnel, facilities, environment and so on. Finally, the improved production site cost accounting and effect summary, the implementation of secondary system evaluation. The evaluation results show that the efficiency of the whole production site has been effectively improved, the product circulation rate has been accelerated, the environment has become cleaner, and the staff operation has become more standardized after the improvement of effective methods.
