【摘要】:餐飲業(yè)是與人民生活息息相關(guān)的傳統(tǒng)勞動(dòng)密集型行業(yè),在繁榮經(jīng)濟(jì)、服務(wù)民生方面起著舉足輕重的作用。隨著我國(guó)改革開放政策的實(shí)施和國(guó)民經(jīng)濟(jì)的跨越式發(fā)展,餐飲業(yè)也呈現(xiàn)出規(guī)模化、多元化、連鎖化、正規(guī)化的良好發(fā)展態(tài)勢(shì),發(fā)展速度居于國(guó)民經(jīng)濟(jì)各部門前列。在餐飲業(yè)蓬勃發(fā)展的同時(shí),員工離職率高的問題卻在困擾著絕大多數(shù)的餐飲企業(yè),影響餐飲企業(yè)持續(xù)化、擴(kuò)大化經(jīng)營(yíng)。對(duì)當(dāng)前餐飲業(yè)員工離職問題成因進(jìn)行深入分析,找出解決這一延續(xù)多年痼疾的對(duì)策,成為我國(guó)政府和廣大餐飲企業(yè)人力資源研究者及管理人員亟待解決的問題。有效控制餐飲企業(yè)員工流失,可使餐飲企業(yè)降低成本,提高管理水平和服務(wù)質(zhì)量,提升員工素質(zhì),進(jìn)而提高企業(yè)經(jīng)營(yíng)效益和競(jìng)爭(zhēng)力,是企業(yè)健康持續(xù)發(fā)展的根本保證。 在剖析L餐飲企業(yè)員工離職問題現(xiàn)狀及影響因素基礎(chǔ)上,餐飲企業(yè)良性經(jīng)營(yíng)和長(zhǎng)足發(fā)展造成深遠(yuǎn)影響的行業(yè)性、社會(huì)性員工離職問題給出系統(tǒng)化解決方案,以員工滿意度測(cè)評(píng)為載體,構(gòu)建餐飲企業(yè)員工離職模型,從社會(huì)、工作、企業(yè)和個(gè)人四個(gè)層面提出解決餐飲企業(yè)員工離職問題的對(duì)策,從理論上進(jìn)一步豐富餐飲企業(yè)員工離職問題研究的內(nèi)涵和深度。論文研究采取文獻(xiàn)研究和社會(huì)調(diào)查相結(jié)合的方法,通過大量查閱文獻(xiàn),奠定理論基礎(chǔ),拓展離職問題研究視野;依照課題構(gòu)建模式,對(duì)L餐飲企業(yè)員工離職問題進(jìn)行定量和定性分析,提出針對(duì)性解決對(duì)策,收到較好效果。該理論研究框架經(jīng)L餐飲企業(yè)的實(shí)證研究證實(shí)具有較強(qiáng)的生命力,對(duì)餐飲企業(yè)員工離職問題研究具有輔助參考價(jià)值,對(duì)企業(yè)人力資源管理工作具有一定借鑒意義。
[Abstract]:Catering industry is a traditional labor-intensive industry which is closely related to people's life. It is booming economy. With the implementation of the reform and opening up policy and the leapfrog development of the national economy, the catering industry also presents a large-scale, diversified, chain. Regularization of the good development situation, the pace of development in the forefront of the national economy. In the restaurant industry booming development, at the same time, the problem of high staff turnover rate is puzzling the vast majority of catering enterprises. The causes of staff turnover in the catering industry are analyzed in depth to find out the countermeasures to solve this chronic disease for many years. It has become an urgent problem for human resource researchers and managers of our government and catering enterprises to solve the problem. Effectively controlling the staff turnover of catering enterprises can reduce the cost of catering enterprises and improve the management level and service quality. It is the fundamental guarantee for the healthy and sustainable development of the enterprise to improve the quality of the staff, and then to improve the efficiency and competitiveness of the enterprise. On the basis of analyzing the current situation and influencing factors of employee turnover in L catering enterprises, the healthy management and rapid development of catering enterprises have a profound impact on the industry, and the social employee turnover problem gives a systematic solution. Taking employee satisfaction evaluation as the carrier, this paper constructs employee turnover model in catering enterprises, and puts forward countermeasures to solve the problem of employee turnover in catering enterprises from four aspects: society, work, enterprise and individual. In theory, it further enriches the connotation and depth of the research on employee turnover in catering enterprises. This paper adopts the method of combining literature research and social investigation, and establishes the theoretical foundation by consulting a large number of documents. Expanding the perspective of the study of turnover; According to the construction model of the project, this paper analyzes quantitatively and qualitatively the problem of employee turnover in L catering enterprises, and puts forward targeted solutions. The theoretical framework has been proved to have strong vitality by the empirical study of L catering enterprises, which has a reference value for the study of employee turnover in catering enterprises. It has certain reference significance to the enterprise human resource management work.
