【摘要】：對(duì)中餐連鎖企業(yè)的實(shí)證研究,主要從中餐連鎖企業(yè)績(jī)效考核指標(biāo)體系的整體構(gòu)建和具體指標(biāo)的設(shè)計(jì)兩方面來(lái)進(jìn)行。中餐連鎖企業(yè)在構(gòu)建績(jī)效考核指標(biāo)體系時(shí),既需要體現(xiàn)鮮明的行業(yè)特色,又需要考慮當(dāng)前普遍存在的人力資源匱乏的嚴(yán)重局面。在構(gòu)建績(jī)效考核指標(biāo)體系時(shí),企業(yè)需特別留意指標(biāo)之間的連帶關(guān)系和指標(biāo)的精簡(jiǎn)問(wèn)題。在具體指標(biāo)的設(shè)計(jì)上,需將此類企業(yè)指標(biāo)分為業(yè)務(wù)、態(tài)度和人員管理三大類別,并結(jié)合指標(biāo)的餐飲業(yè)特色、連鎖業(yè)特色以及如何應(yīng)對(duì)當(dāng)前人員匱乏狀況等進(jìn)行分析。
[Abstract]:The empirical research on Chinese food chain enterprises is mainly from the two aspects of the overall construction of the performance evaluation index system and the design of specific indicators. When building a performance appraisal index system, Chinese chain enterprises need to embody the distinctive industry characteristics and consider the serious situation of the current widespread shortage of human resources. In the construction of performance evaluation index system, enterprises need to pay special attention to the relationship between indicators and the streamlining of indicators. In the design of specific indicators, we need to divide these indicators into three categories: business, attitude and personnel management, and analyze the characteristics of catering industry, the characteristics of chain industry and how to deal with the current shortage of personnel.

【正文快照】： 近年來(lái),中國(guó)餐飲業(yè)普遍呈現(xiàn)出就業(yè)人員供求失衡的狀況。據(jù)中國(guó)人力資源市場(chǎng)信息監(jiān)測(cè)中心報(bào)告,在2013年一季度調(diào)查的全國(guó)10大城市中,有4大城市的“餐飲服務(wù)員和廚工”崗位的空缺人數(shù)遠(yuǎn)遠(yuǎn)超過(guò)求職人數(shù),其中武漢和昆明該崗位空缺數(shù)與求職人數(shù)之比高達(dá)5:1,沈陽(yáng)為3:1,成都為2:1[1]
