內(nèi)蒙古農(nóng)業(yè)大學(xué)學(xué)生餐廳蔬菜和其他食材消費(fèi)量與價(jià)格動(dòng)因分析

【摘要】:以內(nèi)蒙古農(nóng)業(yè)大學(xué)主校區(qū)呼和浩特東、西兩個(gè)校區(qū)即原內(nèi)蒙古林學(xué)院、內(nèi)蒙古農(nóng)牧學(xué)院的8個(gè)餐廳為對(duì)象,分析比較各學(xué)生餐廳以蔬菜為主的食材消費(fèi)及價(jià)格情況,以及與當(dāng)?shù)貧夂颉⑹卟松a(chǎn)和食材市場(chǎng)供應(yīng)的關(guān)系。結(jié)果表明:(1)不同季節(jié)蔬菜食材供應(yīng)價(jià)格與生產(chǎn)上市季節(jié)密切相關(guān)。從每學(xué)年第一學(xué)期開(kāi)學(xué)直到寒假臨近,即從9月到12月,蔬菜進(jìn)價(jià)普遍由低到高,呈現(xiàn)小幅度增長(zhǎng)趨勢(shì),這主要與當(dāng)?shù)厥卟松a(chǎn)和上市逐漸由旺季走向淡季有關(guān)。第二學(xué)期,即從3月到6月,菜價(jià)大部分呈現(xiàn)下降趨勢(shì),這主要與當(dāng)?shù)貧夂驐l件和蔬菜生產(chǎn)上市逐漸由淡季走向旺季有關(guān)。呼和浩特市屬溫帶氣候,春季耕播,夏秋收獲,露地蔬菜如馬鈴薯、蘿卜、大白菜、紅薯等價(jià)格穩(wěn)定偏低,而設(shè)施蔬菜基本屬于高價(jià)蔬菜。香菜、菠菜、油菜、韭菜等小菜漲幅顯著,這主要與其需求量小有關(guān)。(2)不同年份蔬菜價(jià)格和消費(fèi)量與蔬菜產(chǎn)量密切相關(guān)。在2011-2014年間,2012年蔬菜價(jià)格偏高,2013年菜價(jià)較低,2011年后半年和2014年前半年價(jià)格介于前兩年之間。這主要是由于2013年蔬菜豐收,而2012年受氣候影響,本地蔬菜欠收,外地蔬菜運(yùn)輸成本增長(zhǎng),菜源緊缺。(3)蔬菜需求量與菜價(jià)有關(guān)。從各學(xué)生餐廳的需求量可以看出,產(chǎn)品價(jià)格下降之后,一些價(jià)高的精品蔬菜銷量顯著增加,而當(dāng)精品蔬菜價(jià)格偏高時(shí),一些基本的露地蔬菜如馬鈴薯、大白菜、蘿卜等一直保持著銷量領(lǐng)先地位,這主要由于在校大學(xué)生家境貧寒者居多,高收入家庭只占少數(shù)。也從中反應(yīng)了內(nèi)蒙古地區(qū)整體國(guó)民經(jīng)濟(jì)國(guó)民收入偏低,尤其是農(nóng)民階層更低。(4)主食及其他副食,如肉類、禽蛋及調(diào)味品等價(jià)格比較穩(wěn)定,年份或季節(jié)動(dòng)態(tài)變幅很小。副食中僅有少數(shù)肉類和雞蛋價(jià)格有較大變動(dòng)。以上分析表明,內(nèi)蒙古農(nóng)業(yè)大學(xué)學(xué)生餐廳食材價(jià)格存在季節(jié)波動(dòng)、長(zhǎng)期穩(wěn)定及超常波動(dòng)等現(xiàn)象;食材價(jià)格變動(dòng)通常受食材流通和生產(chǎn)等多種因素的制約。影響蔬菜價(jià)格變化的主要因素是其市場(chǎng)充盈度和學(xué)生購(gòu)買(mǎi)能力。論文針對(duì)這些變化規(guī)律和原因提出了高校學(xué)生餐廳食材管理的對(duì)策和建議。
[Abstract]:The main campus of the Inner Mongolia Agricultural University in Hohhot East, West Campus of the two former Inner Mongolia Forestry College, 8 restaurants in Inner Mongolia Institute of agriculture and animal husbandry as the object, analysis of food consumption and price of each student restaurant with vegetables, as well as with the local climate, the relationship between vegetable production and food supply in the market. The results showed that: (1) different seasonal vegetable food supply prices and production season is closely related. Approaching from the first semester of each academic year until winter, from September to December, the purchase price of vegetables is generally from low to high, showed a slight increase trend, which is mainly with the local vegetable production and market gradually from season to season. From March to second semesters. In June, most vegetable prices showed a downward trend, mainly with the local climatic conditions and production of vegetables listed gradually by the off-season. Factors affecting the price of vegetables is a change in the purchasing power of the market and the filling degree of students. According to these changes and the reasons put forward the restaurant food science college students Countermeasures and suggestions for material management.
