【摘要】：隨著我國(guó)人民生活水平的日益提高，食品類別越來(lái)越豐富，人們對(duì)食品質(zhì)量的要求越來(lái)越高，也因此帶動(dòng)了冷鏈物流業(yè)的長(zhǎng)足發(fā)展，雖然我國(guó)冷鏈物流市場(chǎng)需求巨大，但從我國(guó)實(shí)際來(lái)看，每年腐爛、變質(zhì)的食品數(shù)量多達(dá)數(shù)億噸，成為食品冷鏈物流中的發(fā)展瓶頸，因此，保證食品質(zhì)量安全，，防止食品變質(zhì)，降低食品腐爛率，關(guān)乎民生，關(guān)乎人民福祉。 赤峰碩豐畜禽食品有限公司是赤峰市翁牛特旗烏丹鎮(zhèn)的食品加工企業(yè)，曾成功打造了“蒙川”、“草原萬(wàn)順”有機(jī)畜產(chǎn)品品牌，是一個(gè)具有現(xiàn)代化生產(chǎn)能力的肉食品廠，集加工、配送于一體，雖然每年的利潤(rùn)相當(dāng)可觀，但也存在一系列的問(wèn)題，如沒(méi)有專門用于冷鏈運(yùn)輸?shù)能囕v，配送成本較低，運(yùn)輸效率不高，貨損率較高等。另外，配送過(guò)程中信息不通暢，各個(gè)環(huán)節(jié)信息閉塞，配送響應(yīng)時(shí)間較長(zhǎng)，導(dǎo)致缺損率大大增加，無(wú)形中增大了配送成本。 本文首先對(duì)冷鏈物流相關(guān)理論進(jìn)行綜述，介紹了國(guó)內(nèi)外食品冷鏈物流的發(fā)展現(xiàn)狀，介紹了冷鏈及食品冷鏈相關(guān)概念、特性、流程及條件，分析了農(nóng)產(chǎn)品、冷凍食品、連鎖超市和冷飲行業(yè)對(duì)食品冷鏈的需求，介紹了影響我國(guó)發(fā)展食品冷鏈物流業(yè)的制約因素，介紹了食品冷鏈物流業(yè)績(jī)效評(píng)價(jià)體系的構(gòu)建原則，從4個(gè)方面構(gòu)建食品冷鏈物流績(jī)效評(píng)價(jià)模型，并以赤峰碩豐畜禽食品有限公司為例，分析了該企業(yè)目前的食品冷鏈物流現(xiàn)狀，運(yùn)用模糊綜合評(píng)判法進(jìn)行績(jī)效評(píng)價(jià)，并分析績(jī)效評(píng)價(jià)結(jié)果，最后針對(duì)該企業(yè)，提出改善當(dāng)前食品冷鏈狀態(tài)的措施。
[Abstract]:With the improvement of people's living standard in our country, the food category is more and more abundant, and people's demand for food quality is becoming higher and higher, which has led to the rapid development of cold chain logistics industry, although the demand of cold chain logistics market in our country is huge. But according to the reality of our country, the number of rotten food is hundreds of millions of tons every year, which becomes the bottleneck in the development of food cold chain logistics. Therefore, to ensure food quality safety, to prevent food deterioration and to reduce food decay rate are vital to people's livelihood. The welfare of the people is at stake. Chifeng Shuofeng Livestock and Poultry Food Co., Ltd. is a food processing enterprise in Wuniute Banner of Chifeng City. It has successfully built "Mengchuan", "grassland Wanshun" organic animal product brand, and is a meat food factory with modern production capacity. Set processing, distribution in one, although the annual profit is considerable, but there are also a series of problems, such as there are no special cold-chain transport vehicles, distribution costs are low, transport efficiency is not high, high cargo loss rate, and so on. In addition, the information in the distribution process is not smooth, the information of each link is blocked, and the response time of distribution is longer, which leads to a great increase in the defect rate, which increases the distribution cost intangibly. This paper first summarizes the theory of cold chain logistics, introduces the development of food cold chain logistics at home and abroad, introduces the concept, characteristics, process and conditions of cold chain and food cold chain, analyzes agricultural products and frozen food. The demand for food cold chain in supermarket chain and cold drink industry is introduced. The restrictive factors affecting the development of food cold chain logistics industry in China are introduced. The construction principles of performance evaluation system for food cold chain logistics industry are introduced. The performance evaluation model of food cold chain logistics is constructed from four aspects. Taking Chifeng Shuofeng Livestock and Poultry Food Co., Ltd as an example, the present situation of food cold chain logistics in this enterprise is analyzed, and the fuzzy comprehensive evaluation method is used to evaluate the performance. The results of performance evaluation are analyzed. Finally, the measures to improve the status of food cold chain are put forward for the enterprise.
