【摘要】：肉食品是我國(guó)消費(fèi)者的主要食品，然而近年來(lái)頻頻爆發(fā)的“注水肉”、“瘦肉精”、“禽流感”等事件在一定程度上引起了社會(huì)的恐慌。眾所周知，肉食品是引起人們高度重視的食品安全領(lǐng)域。研究肉食品安全問(wèn)題具有非常重要的意義。 本文以肉食品安全為研究對(duì)象，從供應(yīng)鏈的角度，根據(jù)邏輯預(yù)警理論和風(fēng)險(xiǎn)分析理論，采用層次分析法構(gòu)建肉食品安全預(yù)警指標(biāo)體系，建立肉食品預(yù)警模型。 研究的主要內(nèi)容包括：首先，，在分析了國(guó)內(nèi)外食品安全預(yù)警的相關(guān)研究成果后，提出了自己的研究思路。其次，在界定了供應(yīng)鏈、食品供應(yīng)鏈、食品安全、預(yù)警的概念后，分析了邏輯預(yù)警理論和風(fēng)險(xiǎn)分析理論。再次，分析我國(guó)肉食品安全的現(xiàn)狀和影響肉食品安全問(wèn)題的因素。其安全現(xiàn)狀是肉食品安全水平不斷地提高，但形勢(shì)依然嚴(yán)峻；在此基礎(chǔ)上，從原材料采購(gòu)、生產(chǎn)加工、流通銷售環(huán)節(jié)和安全管理上找出肉食品安全的影響因素。再次，在分析肉食品問(wèn)題影響因素的基礎(chǔ)上，采用層次分析法，根據(jù)科學(xué)性、系統(tǒng)性、可操作性原則，以及對(duì)專家的咨詢意見，建立了15個(gè)肉食品安全預(yù)警指標(biāo)。并且通過(guò)專家訪談，利用判斷矩陣計(jì)算其權(quán)重，得出對(duì)肉食品安全影響最大的因素是飼料抽檢合格率，其次是獸藥殘留超標(biāo)，加工工藝標(biāo)準(zhǔn)，食品添加劑含量。最后，根據(jù)歷史數(shù)據(jù)，運(yùn)用Likert五點(diǎn)尺度量表設(shè)置了各指標(biāo)的警限。運(yùn)用多目標(biāo)線性加權(quán)函數(shù)法構(gòu)建肉食品安全預(yù)警模型。并通過(guò)企業(yè)調(diào)研獲取數(shù)據(jù)，將模型應(yīng)用于實(shí)踐。
[Abstract]:Meat food is the main food of our country ' s consumers . However , in recent years , the frequent outbreak of " injection meat " , " lean meat " , " bird flu " and other events have caused the social panic . It is well known that meat food is a food safety field that causes people to attach great importance to food safety . It is very important to study the safety of meat food .

In this paper , based on the safety of meat food as the research object , from the angle of supply chain , according to the theory of logic early - warning and risk analysis , a hierarchy process method is adopted to construct the index system of meat food safety early warning , and a meat food early warning model is established .

First , after analyzing the relevant research results of food safety early warning at home and abroad , the paper puts forward its own research thinking . Secondly , after defining the concept of supply chain , food supply chain , food safety and early warning , the logic early warning theory and risk analysis theory are analyzed .
Based on the analysis of the factors affecting the safety of meat products , the paper sets up 15 safety early warning indexes for meat products based on the analysis of the influencing factors of meat food , and then sets up 15 safety warning indexes for meat products according to the scientific , systematic and operable principles .
