【摘要】：隨著生活水平的提高,食品行業(yè)已經(jīng)進(jìn)入了量增利微的時(shí)代;企業(yè)在選擇擴(kuò)產(chǎn)以滿足市場(chǎng)需求的同時(shí),必需保證產(chǎn)品的質(zhì)量安全。食品生產(chǎn)線建立過程中,普遍由于缺乏將生產(chǎn)線與產(chǎn)品質(zhì)量要求以及食品安全體系三者之間良好的結(jié)合,生產(chǎn)線項(xiàng)目質(zhì)量難以有效實(shí)施和保障,導(dǎo)致生產(chǎn)線建立的過程中質(zhì)量目標(biāo)不斷調(diào)整、更改,甚至生產(chǎn)線投生過程中不斷暴露出產(chǎn)品質(zhì)量缺陷;因此構(gòu)建一個(gè)合理的食品行業(yè)生產(chǎn)線建立的項(xiàng)目質(zhì)量管理模式對(duì)企業(yè)具有重大意義。本文通過案例研究的方法,首先認(rèn)識(shí)學(xué)習(xí)項(xiàng)目質(zhì)量管理的知識(shí)和理論,分析識(shí)別企業(yè)在實(shí)施產(chǎn)品生產(chǎn)線建設(shè)項(xiàng)目過程中質(zhì)量管理方面存在的不足和問題,根據(jù)項(xiàng)目質(zhì)量理論中的方法尋找合適的方法和工具提出對(duì)策,文中采用的工具和方法主要有QFD(質(zhì)量功能展開技術(shù))、HACCP質(zhì)量安全體系、SPC統(tǒng)計(jì)過程控制等;然后結(jié)合案例A公司食品添加劑干粉灌裝線建立項(xiàng)目結(jié)合構(gòu)建的項(xiàng)目質(zhì)量管理構(gòu)建模型進(jìn)行實(shí)施,內(nèi)容包括項(xiàng)目團(tuán)建立、項(xiàng)目質(zhì)量規(guī)劃、項(xiàng)目質(zhì)量保證、項(xiàng)目質(zhì)量控制,確保建立有一條即保障生產(chǎn)線硬件質(zhì)量要求又保證實(shí)現(xiàn)的產(chǎn)品質(zhì)量的生產(chǎn)線;最后在項(xiàng)目實(shí)施研究過程中進(jìn)行總結(jié)并找出不足之處提出展望。
[Abstract]:With the improvement of living standard, the food industry has entered the era of small volume increase and profit increase, while enterprises choose to expand production to meet the market demand, the quality and safety of products must be guaranteed at the same time. In the process of establishing food production line, due to the lack of a good combination of product line, product quality requirements and food safety system, it is difficult to effectively implement and guarantee the quality of production line project. Lead to the establishment of the production line in the process of continuous adjustment of quality objectives, change, and even the production line in the process of continuous exposure of product quality defects; Therefore, it is of great significance for enterprises to construct a reasonable project quality management model for food industry production line. In this paper, through the method of case study, we first understand the knowledge and theory of project quality management, and analyze and identify the shortcomings and problems of quality management in the implementation of product line construction project. According to the methods in the project quality theory, the author puts forward the countermeasures. The main tools and methods used in this paper are QFD (quality function unfurling technology) and QFD (quality and safety system) statistical process control. Then combined with the case A company food additive dry powder filling line establishment project combined with the construction of the project quality management construction model, including project group establishment, project quality planning, project quality assurance, project quality control, To ensure the establishment of a production line that not only guarantees the hardware quality of the production line, but also guarantees the product quality achieved; finally, it summarizes the research process of the project implementation and points out the shortcomings and puts forward the prospect.
