國內(nèi)外旅游食物消費(fèi)研究綜述

【摘要】:旅游食物消費(fèi)是旅游消費(fèi)的首要內(nèi)容。隨著旅游學(xué)科研究的不斷深入,旅游食物消費(fèi)近年來逐漸成為學(xué)界關(guān)注的熱點(diǎn)。目前,國內(nèi)對旅游食物消費(fèi)的研究僅限于對飲食文化資源的開發(fā)和旅游食物衛(wèi)生等方面,處于描述性研究的初級階段。國際上旅游食物消費(fèi)研究起步較早,內(nèi)容也較為全面,除對旅游食物安全風(fēng)險(xiǎn)、食物旅游產(chǎn)品開發(fā)和市場營銷進(jìn)行廣泛探討外,更在游客食物消費(fèi)行為、旅游食物消費(fèi)綜合效應(yīng)等領(lǐng)域取得了系統(tǒng)成果。本文利用文獻(xiàn)分析方法,在綜合分析和梳理國內(nèi)外食物消費(fèi)研究文獻(xiàn)基礎(chǔ)上,歸納總結(jié)了旅游食物消費(fèi)發(fā)展階段和特征,并重點(diǎn)從游客食物消費(fèi)行為模式、旅游食物資源開發(fā)、旅游地美食節(jié)慶與營銷、旅游食物安全與風(fēng)險(xiǎn)、旅游食物消費(fèi)與旅游地發(fā)展、旅游食物消費(fèi)環(huán)境影響與可持續(xù)發(fā)展等6個(gè)方面對旅游食物消費(fèi)的研究內(nèi)容和進(jìn)展進(jìn)行了分析,最后提出了中國現(xiàn)階段旅游食物消費(fèi)研究應(yīng)關(guān)注的重點(diǎn)領(lǐng)域和方向。
[Abstract]:Tourism food consumption is the primary content of tourism consumption. With the deepening of tourism research, tourism food consumption has gradually become the focus of academic attention in recent years. At present, the domestic research on tourism food consumption is limited to the development of dietary cultural resources and tourism food hygiene, and is in the primary stage of descriptive research. The international research on tourism food consumption started earlier, and the content is also relatively comprehensive. In addition to the extensive discussion on tourism food safety risks, food tourism product development and marketing, it is also in tourists' food consumption behavior. Comprehensive effects of tourism food consumption and other areas have achieved systematic results. On the basis of comprehensive analysis and combing of domestic and foreign food consumption research literature, this paper summarizes the development stage and characteristics of tourism food consumption, and focuses on tourist food consumption behavior patterns and tourism food resources development. The research contents and progress of tourism food consumption are analyzed from six aspects: festival and marketing, food safety and risk, food consumption and tourism destination development, environmental impact and sustainable development of tourism food consumption. Finally, the paper puts forward the key areas and directions of tourism food consumption research in China.
