豬肉供應鏈中沙門氏菌風險研究

【摘要】:正我國作為豬肉生產和消費大國,豬肉的質量安全問題頻繁發(fā)生,由沙門氏菌通過豬肉產品傳播給人類引起的食物中毒事件引起世界各國的廣泛關注。據報道,在全球范圍內有41.3%的食源性疾病來自于豬肉產品[1],在中國的食源性疾病有70%~80%是由于沙門氏菌引起的,而有90%的沙門氏菌疾病又是由肉類等動物產品引起的[2]。說明控制豬肉產品微生物感染刻不容緩。筆者對沙門氏菌進行了介紹,
[Abstract]:As a big country of pork production and consumption, the problem of pork quality and safety occurs frequently in China. The food poisoning caused by salmonella through pork products has caused widespread concern all over the world. It is reported that 41.3% of foodborne diseases worldwide come from pork products [1] and 70% of food-borne diseases in China are caused by salmonella. And 90% of salmonella diseases are caused by animal products such as meat. It shows that it is urgent to control microbial infection in pork products. The author introduced Salmonella.
