供應(yīng)鏈視角下食品安全綜合評價(jià)體系研究
[Abstract]:At present, the food safety problem is more and more prominent, and the food safety field in our country is facing a severe test. Food safety is a serious threat to the people's health and life safety, and it also affects the healthy development of food industry and social economy in China. Ensuring food safety has become the main goal at present. The food supply chain is a whole composed of related enterprises in agriculture, food processing industry, wholesale and retail trade and logistics and distribution industry. These economic stakeholders run through every link from the primary producer to the consumer of food. The factors affecting food safety exist in these links of food supply chain. Each link in the food supply chain affects each other, which makes the guarantee of food safety not only the responsibility of a single enterprise, but also the cooperation of the enterprises in each link of the supply chain. The food enterprises in the food supply chain can realize the maximum of the whole benefit of the supply chain and ensure the food safety of the whole food supply chain only by coordinating the cooperation and taking on the risks and benefits together. From the point of view of supply chain, this paper divides the food supply chain into four main links: raw material supply, food production and processing, food storage and transportation, and food consumption. Combined with food safety theory, food safety control theory, food supply chain theory and system evaluation theory, this paper analyzes in detail various unsafe factors that threaten food safety in every link of food supply chain. The comprehensive evaluation system of food safety is constructed successfully by selecting relevant indexes. On this basis, this paper applies the extension evaluation method, taking the food supply chain of a dairy enterprise as an example, carries on the food safety comprehensive evaluation research, and determines the safety grade of the enterprise through the food safety comprehensive evaluation system. The effectiveness of the food safety comprehensive evaluation index system proposed in this paper and the rationality of food safety research from the perspective of food supply chain are verified by comparing the safety grade after the improvement of supply chain overall coordination.
