南方特色水果供應鏈的品質安全風險評價與管理——以龍眼為例

【摘要】:以典型亞熱帶水果龍眼為研究對象,運用專家評分法和層次分析法對龍眼供應鏈過程中的生產、供應、物流、零售、消費環(huán)節(jié)的安全風險進行研究。在調查的基礎上,通過模擬冷鏈物流條件,檢測和分析龍眼在各種運輸貯藏條件下品質指標的變化程度;基于龍眼的理化性質和試驗數據變化規(guī)律,建立龍眼供應鏈品質安全指標體系;結合雙指標體系對龍眼供應鏈的品質安全風險進行定性和定量的評價,結果表明,在適當的冷鏈物流條件下(溫度5℃,有包裝),龍眼供應鏈過程的品質安全風險最低。并針對各環(huán)節(jié)的風險提出了有效的規(guī)避和控制措施。
[Abstract]:Taking the typical subtropical fruit longan as the research object, the safety risk of production, supply, logistics, retail and consumption in the process of longan supply chain was studied by using expert scoring method and AHP. On the basis of investigation, through simulating the cold chain logistics condition, the change degree of quality index of longan under various transportation and storage conditions was detected and analyzed, and based on the physicochemical properties of longan and the rule of change of test data, The quality and safety index system of longan supply chain is established, and the qualitative and quantitative evaluation of the quality and safety risk of longan supply chain is carried out in combination with the double index system.
