基于風(fēng)險管理角度的食品供應(yīng)鏈管理研究

【摘要】:食品是我們?nèi)祟愘囈陨婧桶l(fā)展的基本物質(zhì),是人們在日常生活中最基本的必需品。因此,食品質(zhì)量的高低、安全與否直接關(guān)系到消費者的身體健康、國家的穩(wěn)定以及整個社會的進(jìn)步。在目前的市場條件下,食品行業(yè)內(nèi)企業(yè)間的競爭已經(jīng)逐步轉(zhuǎn)變?yōu)楣⿷?yīng)鏈之間的競爭。然而由于不同于工業(yè)產(chǎn)品,食品由于其自身的自然屬性使其對于供應(yīng)鏈的要求非常之高,供應(yīng)鏈的設(shè)計也因此越來越復(fù)雜。在日益復(fù)雜的供應(yīng)鏈條件下風(fēng)險事件也不斷發(fā)生,給供應(yīng)鏈上的相關(guān)企業(yè)往往帶來不可預(yù)知的損失。因此如何準(zhǔn)確地識別出食品供應(yīng)鏈潛在的風(fēng)險因素,并對他們進(jìn)行科學(xué)合理的評估,總結(jié)出有效的風(fēng)險控制建議就成為食品供應(yīng)鏈管理的一個重要議題。 本文總結(jié)了食品供應(yīng)鏈管理和風(fēng)險管理的研究現(xiàn)狀和特點,對國內(nèi)外的研究成果進(jìn)行了總結(jié),并在此基礎(chǔ)上進(jìn)行了深入研究。首先將食品供應(yīng)鏈中風(fēng)險來源的主體劃分為三大類風(fēng)險因素,分別是外部因素、內(nèi)部因素和關(guān)聯(lián)因素。在這三大類風(fēng)險因素的基礎(chǔ)上又對其進(jìn)行了深入的剖析,,最終總結(jié)出十六種具體的風(fēng)險因素。即經(jīng)濟(jì)環(huán)境風(fēng)險、自然環(huán)境風(fēng)險、法律環(huán)境風(fēng)險、產(chǎn)業(yè)政策風(fēng)險、政治風(fēng)險、食品質(zhì)量風(fēng)險、流運輸風(fēng)險、生產(chǎn)風(fēng)險、存貨風(fēng)險、財務(wù)風(fēng)險、銷售風(fēng)險、企業(yè)道德風(fēng)險、結(jié)構(gòu)風(fēng)險、相互信任風(fēng)險、合作風(fēng)險、信息風(fēng)險。之后總結(jié)出風(fēng)險因素的四種評估指標(biāo),分別是危害性、可能性、不可控性以及傳染性,再根據(jù)有關(guān)食品企業(yè)進(jìn)行調(diào)查研究的基礎(chǔ)上利用層次分析法對識別出的風(fēng)險因素進(jìn)行了評估。建立了風(fēng)險因素層次模型,計算出了每種風(fēng)險在四種風(fēng)險屬性下的權(quán)重值。最終根據(jù)風(fēng)險影響力計算公式得出了食品供應(yīng)鏈中每種風(fēng)險因素的風(fēng)險影響力權(quán)重值。最后根據(jù)評估出的結(jié)果,對各風(fēng)險因素進(jìn)行了排序。得出在食品供應(yīng)鏈系統(tǒng)中對供應(yīng)鏈安全性影響力較為明顯的幾個風(fēng)險因素依次是食品質(zhì)量風(fēng)險、物流運輸風(fēng)險、合作風(fēng)險、生產(chǎn)技術(shù)風(fēng)險、信任風(fēng)險、道德風(fēng)險、結(jié)構(gòu)風(fēng)險、信息溝通風(fēng)險。并對影響力明顯的風(fēng)險指標(biāo)提出了具體的控制防范建議,從而達(dá)到對供應(yīng)鏈風(fēng)險管理的目的。
[Abstract]:Food is the basic material for our survival and development, and the most basic necessity in our daily life. Therefore, the quality of food, safety or not directly related to the health of consumers, the stability of the country and the progress of the whole society. Under the current market conditions, the competition among enterprises in the food industry has gradually changed into the competition between supply chains. However, different from industrial products, food has a very high demand for supply chain because of its natural properties, and the design of supply chain is becoming more and more complex. Under the increasingly complex supply chain conditions, the risk events also occur constantly, which often bring unpredictable losses to the related enterprises in the supply chain. Therefore, how to accurately identify the potential risk factors in food supply chain, and evaluate them scientifically and reasonably, and summarize effective risk control suggestions has become an important issue in food supply chain management. This paper summarizes the research status and characteristics of food supply chain management and risk management, summarizes the research results at home and abroad, and further studies on this basis. Firstly, the main body of risk source in food supply chain is divided into three types of risk factors, namely external factors, internal factors and related factors. On the basis of these three kinds of risk factors, this paper makes a deep analysis of them, and finally summarizes 16 kinds of specific risk factors. Namely, economic environment risk, natural environment risk, legal environment risk, industrial policy risk, political risk, food quality risk, flow risk, production risk, inventory risk, financial risk, sales risk, enterprise moral hazard, Structural risk, mutual trust risk, cooperation risk, information risk. And then summed up the four assessment indicators of risk factors, namely, harmfulness, possibility, uncontrollability and infectivity. On the basis of the investigation and research of the food enterprises, the risk factors identified were evaluated by analytic hierarchy process (AHP). The hierarchical model of risk factors is established and the weights of each risk under four risk attributes are calculated. Finally, the weight of each risk factor in food supply chain is obtained according to the formula of risk influence. Finally, according to the evaluation results, the risk factors are ranked. Several risk factors which have obvious influence on supply chain safety in food supply chain system are food quality risk, logistics transportation risk, cooperation risk, production technology risk, trust risk, moral hazard, structural risk, etc. Communication risk. And put forward the concrete control and prevention suggestion to the risk index with obvious influence, so as to achieve the purpose of risk management in supply chain.
