冰糖橙果品質量安全溯源技術體系的建立

【摘要】:柑橘是世界栽種面積和產(chǎn)量最大的水果,柑橘也是果樹家族里最重要的成員之一。湖南省的柑橘種植形成了較完善的產(chǎn)業(yè)體系,整體穩(wěn)步增長,產(chǎn)量和產(chǎn)值在全國排名首位。在柑橘產(chǎn)業(yè)的發(fā)展過程中,果品質量安全問題已成為我國果業(yè)發(fā)展的瓶頸,加強果品質量和對產(chǎn)地環(huán)境的監(jiān)控已成為首要任務。通過對冰糖橙果品溯源系統(tǒng)的建立和實施,一旦發(fā)現(xiàn)問題果品時進行產(chǎn)品追責有據(jù)可依,幫助冰糖橙果品質量安全的健康發(fā)展,并對其它柑橘果品質量安全溯源系統(tǒng)提供理論依據(jù)。因此,建立溯源技術體系能夠更好的起到監(jiān)督果品質量安全的作用,為果品可持續(xù)發(fā)展提供有利的依據(jù)。 本文的主要研究工作由以下六個方面組成: 1、果品質量安全溯源技術的現(xiàn)狀及國內外溯源系統(tǒng)的研究。從食品安全與監(jiān)管入手,將果品溯源的理念引入到柑橘產(chǎn)業(yè)來。 2、冰糖橙溯源系統(tǒng)中溯源信息的分析和確定。首先對冰糖橙果品進行介紹,并分析了生產(chǎn)過程中影響果品質量安全問題的相關因素。通過問卷調查的方式,了解消費者果品質量安全意識以及果品質量安全的重要影響因素,并確定了冰糖橙整個生產(chǎn)環(huán)節(jié)需要記錄的溯源信息。 3、冰糖橙溯源信息分類與編碼。結合冰糖橙生產(chǎn)供應鏈信息,通過設計標識的唯一性,建立冰糖橙質量安全溯源體系,實現(xiàn)冰糖橙果品從種植、采后、運輸、銷售各個環(huán)節(jié)的全程溯源信息記錄。 4、冰糖橙溯源信息溯源技術系統(tǒng)平臺搭建。基于網(wǎng)絡平臺,建立一套冰糖橙生產(chǎn)管理、信息追溯體系。 5、冰糖橙溯源系統(tǒng)的技術支持條件。從冰糖橙溯源系統(tǒng)運行的軟件功能和硬件建設兩方面進行介紹。對冰糖橙產(chǎn)業(yè)鏈生產(chǎn)流通溯源系統(tǒng)的需求及對需求的分析,確定系統(tǒng)應具備的功能。通過對各個部門相對應的職能和角色扮演分析。 6、冰糖橙溯源系統(tǒng)的運行。消費者在溯源平臺輸入冰糖橙溯源碼或掃描溯源碼,就可以查詢到冰糖橙在生產(chǎn)供應鏈中完整、詳細溯源信息。 本文旨在通過對冰糖橙果品質量安全溯源系統(tǒng)的建立,對整個柑橘產(chǎn)業(yè)鏈溯源體系做出了貢獻,幫助建立一套有效的柑橘果品質量安全溯源系統(tǒng)做出理論和實踐依據(jù)。
[Abstract]:Citrus is one of the most important members of fruit family in the world. Citrus planting in Hunan Province has formed a perfect industrial system with steady growth, and the yield and output value rank first in the country. In the development of citrus industry, the quality and safety of fruit has become the bottleneck of the development of fruit industry in China. It is the primary task to strengthen the quality of fruit and monitor the environment of producing area. Through the establishment and implementation of the fruit traceability system, once the problem fruit is found, the product can be traced according to the evidence to help the healthy development of the quality and safety of the fruit. And provide theoretical basis for other citrus fruit quality and safety traceability system. Therefore, the establishment of traceability technology system can better supervise the quality and safety of fruit, and provide a favorable basis for the sustainable development of fruit. The main research work of this paper consists of the following six aspects: 1. The current situation of fruit quality and safety traceability technology and the research of traceability system at home and abroad. Starting with food safety and supervision, the idea of fruit traceability is introduced into citrus industry. 2. Analysis and determination of traceability information in the tracing system. At first, the fruit of rock sugar orange is introduced, and the related factors that affect the quality and safety of the fruit in the process of production are analyzed. Through the way of questionnaire investigation, we know consumers' awareness of fruit quality and safety and the important influencing factors of fruit quality and safety, and determine the traceability information which should be recorded in the whole production process of iced orange. 3. Classification and coding of traceability information. Based on the information of the supply chain and the unique design of the mark, the traceability system of the quality and safety of the orange is established to record the whole process of tracing the source of the fruit from planting, collecting, transporting and selling. 4. The platform of the information traceability technology system is set up. Based on the network platform, a set of production management and information traceability system is established. 5. The technical support condition of the tracing system. This paper introduces the software function and hardware construction of the tracing system. The requirements and functions of the production and circulation traceability system for the production and circulation of ice orange industry chain are analyzed and the functions of the system are determined. Through the corresponding function and role-playing analysis of each department. 6. The operation of the tracing system. Consumers input the source code or scan traceability code in the traceability platform, and the complete and detailed traceability information can be found in the production supply chain. The purpose of this paper is to make contributions to the traceability system of citrus industry chain by establishing a traceability system for the quality and safety of citrus fruits, and to help to establish an effective traceability system of citrus fruit quality and safety based on theory and practice.
