【摘要】：目的綜述了微膠囊技術(shù)在抗菌包裝領(lǐng)域的研究進(jìn)展,為進(jìn)一步開發(fā)微膠囊技術(shù)在抗菌包裝中的應(yīng)用提供科學(xué)的研究基礎(chǔ)。方法通過對(duì)國內(nèi)外研究現(xiàn)狀和研究成果的分析和總結(jié),介紹微膠囊制備方法、表征方法和緩釋機(jī)理;抗菌包裝抗菌劑的種類及特點(diǎn),概括微膠囊技術(shù)在抗菌包裝的研究進(jìn)展。結(jié)果分析表明微膠囊技術(shù)能夠增加抗菌成分的穩(wěn)定性,與包裝系統(tǒng)結(jié)合能夠達(dá)到緩釋抗菌效果,提高了產(chǎn)品的貨架期。結(jié)論大量研究結(jié)果表明,運(yùn)用微膠囊技術(shù)能夠穩(wěn)定芯材,達(dá)到持久抗菌的效果,微膠囊技術(shù)在抗菌包裝方面的發(fā)展?jié)摿^大,但是微膠囊技術(shù)在抗菌方面的緩釋機(jī)理還有待進(jìn)一步研究。
[Abstract]:Objective to review the research progress of microencapsulation technology in the field of antimicrobial packaging, and to provide a scientific basis for the further development of microencapsulation technology in antibacterial packaging. Methods based on the analysis and summary of the current research situation and research results at home and abroad, the preparation methods, characterization methods and slow-release mechanism of microcapsules, the kinds and characteristics of antimicrobial packaging agents, and the research progress of microencapsulation technology in antibacterial packaging were summarized. The results showed that the microencapsulation technology could increase the stability of the antibacterial components, and the combination with the packaging system could achieve the slow-release antibacterial effect and improve the shelf life of the products. Conclusion A large number of results show that microencapsulation technology can stabilize the core material and achieve a lasting antibacterial effect. The microcapsule technology has a great potential for development in the field of antimicrobial packaging. However, the mechanism of microencapsulation in antimicrobial release remains to be further studied.
