運輸過程中機械振動對果蔬貯藏品質(zhì)的影響

【摘要】:目前,減少果蔬采后損耗這一課題正在引起越來越多人的關注。在流通過程中,果蔬往往會承受靜載、振動、擠壓、跌落沖擊等諸多載荷形式的作用,這些都會導致果蔬機械損傷的產(chǎn)生,而機械損傷也正是造成果蔬采后損耗的主要因素之一。因此,本文根據(jù)運輸過程中實際情況,研究了運輸過程中振動沖擊和振動載荷對獼猴桃和西紅柿貯藏品質(zhì)的影響。主要從以下幾點進行了研究:1)跌落沖擊對獼猴桃貯藏品質(zhì)的影響:在跌落試驗臺上,通過逐漸升高跌落高度觀察不同跌落高度對獼猴桃包裝件的影響程度,直到包裝件出現(xiàn)明顯的損傷,然后在不同的溫度下對獼猴桃果實進行貯藏,觀察其果實硬度、可溶性固形物含量、可滴定酸含量和丙二醛含量等品質(zhì)隨貯藏時間的變化過程。2)運輸過程中機械振動頻率對獼猴桃和西紅柿貯藏品質(zhì)的影響:在振動實驗臺上,模擬運輸過程中的機械振動情況。將獼猴桃和西紅柿的包裝件分別置于振動試驗臺上進行定頻實驗,將試驗后的兩種果實置于0℃的冷庫中貯藏,研究機械振動對獼猴桃和西紅柿果實貯藏品質(zhì)的影響。3)運輸過程中機械振動加速度對獼猴桃和番茄貯藏品質(zhì)的影響:在運輸過程中,由于運輸工況以及果蔬包裝件所處位置的不同,各包裝件在相同振動頻率下所承受的振動加速度也是不相同的。在10Hz振動頻率下,分別對相同的獼猴桃包裝和番茄包裝件進行加速度為2.5m/s2、5m/s2以及7.5m/s2的振動實驗,研究經(jīng)歷了不同加速度下運輸過程的果蔬果實貯藏品質(zhì)的變化情況。4)機械振動對不同堆碼高度獼猴桃貯藏品質(zhì)的影響:在實驗過程中,進行獼猴桃的振動堆碼實驗,將獼猴桃包裝件進行堆碼,設定振動頻率10Hz,將實驗后不同層數(shù)的獼猴桃果實置于三種不同溫度的冷庫中進行貯藏,探究機械振動對不同堆碼高度處上獼猴桃貯藏品質(zhì)的影響。
[Abstract]:At present, the issue of reducing postharvest loss of fruits and vegetables is attracting more and more attention. In the process of circulation, fruits and vegetables are often subjected to static load, vibration, extrusion, drop impact and many other forms of load, which will lead to fruit and vegetable mechanical damage. Mechanical damage is also one of the main factors causing postharvest loss of fruits and vegetables. Therefore, the effects of vibration shock and vibration load on the storage quality of kiwifruit and tomato were studied according to the actual conditions during transportation. The effects of drop impact on the storage quality of kiwifruit were studied from the following aspects: on the drop test bench, the effects of different drop heights on kiwifruit packaging were observed by increasing the drop height gradually. Then the kiwifruit was stored at different temperatures to observe its firmness and soluble solids content. Effect of mechanical vibration frequency on storage quality of kiwifruit and tomato during transport: on vibration test bench, mechanical vibration during transportation was simulated.
