奉化市農(nóng)村自辦宴席現(xiàn)狀及監(jiān)管對策

【摘要】:近年來,,隨著農(nóng)村經(jīng)濟(jì)的發(fā)展,農(nóng)民生活水平的提高,農(nóng)村家庭自辦宴席的規(guī)模越來越大,頻率越來越高,飯菜的品種花樣越來越多,一部分專(兼)職從事農(nóng)村家宴的人員應(yīng)運(yùn)而生,但由于受加工場地條件、從業(yè)人員食品安全衛(wèi)生意識水平、承辦者自我保護(hù)能力、監(jiān)管人員缺乏的限制,農(nóng)村自辦宴席普遍存在很大的食品安全隱患,極易引起群體性食物中毒事件。為探討農(nóng)村自辦宴席的監(jiān)管對策,本文通過對奉化市區(qū)、各鄉(xiāng)鎮(zhèn)自辦宴席場所建設(shè)情況、民間廚師隊(duì)伍現(xiàn)狀調(diào)查、食品安全法規(guī)知識了解情況、食品采購環(huán)節(jié)抽樣、食品加工制作環(huán)節(jié)抽樣分析,系統(tǒng)的提出對奉化市農(nóng)村自辦宴席監(jiān)管的對策。
[Abstract]:In recent years, with the development of rural economy and the improvement of farmers' living standard, the scale and frequency of self-catering in rural families have become larger and larger, and the variety of meals has become more and more varied. Some specialized (concurrently) professionals engaged in rural family dinners emerged as the times require. However, due to the conditions of processing sites, the employees' level of food safety and hygiene awareness, the ability of the contractors to protect themselves, and the lack of supervision personnel, There are many hidden dangers of food safety in rural self-run banquet, which can easily lead to mass food poisoning. In order to probe into the supervision and control measures of rural self-hosted banquet, this paper makes a survey of the construction of the feasting place in Fenghua City and the villages and towns, the present situation of the folk cooks, the knowledge of food safety laws and regulations, and the sampling of food procurement links. The sampling analysis of food processing and production links, systematically put forward to Fenghua rural self-run banquet supervision countermeasures.
